Ingredients
200 g quinoa (~1 cup)
Add water.
Soak quinoa in water for 20 minutes.
1/2 tsp salt
400 ml water (~1 ⅔ cups)
Cover and cook for 15-20 minutes.
Now we make the chia egg.
2 tsp chia seeds
75 ml water (~¼ cup)
Let it swell for about 10 minutes.
1 onion
Finely chop the onion.
olive oil
1/2 tsp cumin
½ tsp garlic powder
1/2 tsp turmeric
Stir and heat for about 30 seconds.
Add onion to the pan.
Cook until the onion is soft.
Add pepper.
Add salt.
Set aside and let cool.
200 g carrots (~1 ½ cups grated)
Add finely grated carrots.
2 tsp sunflower seeds
Mix well. Cook for 10 minutes.
Place in a bowl and let cool.
A handful of parsley or coriander
1 tbsp chili flakes (optional)
The chia egg is ready.
You can also use 2 regular eggs.
Mix well.
80 g flaxseed or chickpea flour (~⅓ cup)
Add gradually and mix well.
Grease the baking tray.
Grease your hands with oil.
Form patties.
Lightly brush each patty with oil.
Bake in the oven at 180°C (350°F) for 15 minutes.
Add 1 teaspoon of mustard to 150 g of natural yogurt (~⅔ cup)
1 tbsp lemon juice
1 tbsp olive oil
1 garlic clove
1–2 tbsp finely chopped parsley or dill
Salt and pepper to taste.
Mix well.
