📋 INGREDIENTS:
For the chocolate sponge (all ingredients should be at room temperature):
• 195 g flour (1 ½ cups + 2 tbsp)
• 230 g sugar (1 cup + 3 tbsp)
• 2 eggs
• 70 g vegetable oil (¼ cup + 1 tbsp)
• 30 g cocoa powder (⅓ cup)
• 110 g milk (½ cup)
• 8 g baking powder (2 tsp)
• 1.5 g baking soda (¼ tsp)
• 1 pinch of salt
• 120 g boiling water (½ cup)
For the mandarin cream mousse:
• 250 g mascarpone (1 cup + 2 tbsp)
• 150 g sweetened condensed milk (½ cup)
• 200 g cold cream 33–35% (¾ cup + 1 tbsp)
• 150 g mandarins, finely chopped (⅔ cup)
• 11 g gelatin (adjust according to gelatin type)
• 65 g water (¼ cup + 1 tsp)
Additionally:
• 150 g mandarins for layering or decorating (⅔ cup)
For the chocolate glaze:
• 80 g sugar (½ cup)
• 10 g cornstarch (1 tbsp + 1 tsp)
• 20 g cocoa powder (¼ cup)
• 100 g milk or water (½ cup)
• 30 g butter (2 tbsp)
Bake at 170 °C (338 °F) for 40–45 minutes.
