Thai-style ground beef (UK: mince) stir-fry you can cook in ~5 minutes. A Bangkok-inspired umami trio of soy sauce : oyster sauce : fish sauce = 2:1:1 (about 5% sauce to meat → ~1% salt) makes it big on flavour with only supermarket ingredients. I show how to air-dry mince so it sears (not stews), skim fat before aromatics, then build micro-scorched fond with the sauce. No Thai basil?
