Using pork tenderloin makes this a really quick and easy recipe because it cooks so quickly – 3 minutes for golden crispy pork pieces, then a 2 minute sauce simmer. No deep frying. HOW CAN SOMETHING SO QUICK BE SO GOOD??!

The sauce is sweet, savory and a little bit limey. Not spicy. Just 4 ingredients - sweet chilli sauce, garlic, lime juice and fish sauce. Sweet chilli sauce is a great shortcut - bit one dimensional by itself, but with fish sauce and a quick simmer, significantly improves.

Crispy Thai Pork Bites in Sticky Sweet Chilli Sauce

CRISPY PORK BITES:
600 g / 1.2 lb pork tenderloin, cut into 2cm/0.8” cubes
1 tbsp fish sauce
1 1/2 tbsp + 1/2 cup cornflour/cornstarch
~1 cup oil (0.5 cm/0.2” depth) – canola, veg, sunflower, peanut (not olive oil)
SWEET CHILLI SAUCE:
1/2 cup sweet chilli sauce
1 1/2 tbsp lime juice
1 tbsp fish sauce
2 garlic cloves, finely grated
GARNISH AND SERVING:
Rice, coriander/cilantro leaves or sliced green onion, lime wedges

1. Toss pork in fish sauce, then the 1.5 tbsp cornflour. Add 1/2 cup cornflour, coat pork (separate), then squeeze lightly in fist to make it stick well. Place in colander, shake off excess.
2. Heat oil – check by dipping pork in, should sizzle straight away. Add half pork, keep them separated. Cook 3 min in total as follows – 1 min on the first side until golden, then flip. Remove onto paper towel lined tray, cook 2nd batch.
3. Pour out oil, give pan a quick wipe. Add Sauce ingredients, simmer 2 min on medium / med high. Add pork, quick toss, serve over rice!
