Welcome to Grill and Smoke Barbecue. I'm Jeffrey. Today I'm going to be doing a first. This is going
to be my first time smoking a tri-tip and the reason why it's the first time is because I live
out in the east so tri-tip isn't as readily available as it is out in the west where it's
more of a popular cut of meat. So I just so happened to be somewhere where there was one
tri-tip and I just happened to be that one person that grabbed it. So today it's kind of
gonna be a practice for me. So I'm gonna bring y'all along with me. The tri-tip they say it's
choice. It's about a 2.4 pounder. So we're gonna smoke it and see if I can get it right. Let's do this.
All right so here's the tri-tip and the way is you kind of put you in mind of a really small brisket
and the fact that there's two different directions that the muscles are running.
So here you can see it's going this way and when you get over here it's going this way. So just
like the point and the flat on the brisket you gotta you want to cut against the grain. So when
I'm finished I'll probably end up cutting it this way slicing these this way so I can come back to
slice these this way. All right so what we're gonna do first is the binder that I'm gonna use
which I'm gonna use Worcestershire sauce and just get this all over it. Now I did trim it a little
here it was like a big chunk of hard fat so I just cut that out. And here I'm gonna be using some
Kinder's pretty much SPG their salt pepper garlic blend because of course beef loves salt and pepper
and it's a little bit coarse in here so to help me get some of that crust on here it might
kind of make it good since it's the first time I'm doing it don't really know.
And on top of that you know I got to have my Uncle Steve shape
so I'm gonna be using his thick meat and this has a pretty good abundance of pepper in it
and you know I like it spicy so gonna come with the Uncle Steve spicy R on top of this.
I'm gonna do just a light coat of it then I'll get the rest of it zoom through this portion
this sit and sweat out a little so that those rubs can penetrate while I go warm up the Pit Boss
Austin XL which I'm gonna put at 250 to do the first portion where I'm gonna get it up to maybe
125 to 128 degrees. I'm gonna take it off crank the Pit Boss up and I'm gonna do a reverse sear
on it. I want to try to get an end IT on this of about 135 to between 135 140 for that medium rare
so let's see when I put this on the pit. All right so we got it up to 250 get it on here
I want it about 30. Okay so it's been about 40 minutes and I've already hit 125 on the temp
so I'm gonna take it off and crank this up to about high and get ready to reverse sear it.
All right let's get this on here we're gonna do about a minute and a half
and I'm gonna turn it another minute and a half and I'm gonna flip it over and do the same thing.
All right let's go ahead and give it a twist.
All right yeah that just gives me the phone cut off on me because I had it too close to the
smoker and it overheated so I didn't get to record the uh searing part but here we are here
I've gave it 15 minutes to rest and now I'm about to cut into it. All right
there we have it looks like a good medium rare feels tender on both sides.
has a good little smoke ring around it I guess all they have to do now cut me a piece and taste it.
So here we go nice piece
this is really good
I don't see why we're not more on tri-tip out here in the east like they are in the west
the smoke on it it's good that Kenders SPG the um gave it that nice crust
and I guess searing it also helped and that Uncle Steve's the um spicy on that thick meat
great compliment to it um for the first time I think I nailed the temp on it
nailed the tenderness overall great cook so to end I'd like to thank you for joining me today
