INGREDIENTS

- 2–3 bone-in or boneless chicken pieces (skin-on preferred)
- 1 tsp extra virgin olive oil
- 1 clove garlic (minced) or ¼ tsp jarred minced garlic
- ½ white onion, chopped
- 1 green bell pepper, chopped
- 1 tomato, diced
- 1 bay leaf
- ½ tsp Mrs. Dash seasoning blend
- ½ tsp black pepper
- ¼ tsp paprika
- ¼ tsp garlic powder
- Water (enough to cover chicken)

🍅 For the Sauce:
- 1 (10 oz) can enchilada sauce
- ½ clove garlic, minced (or ¼ tsp minced garlic)
- 1 (10 oz) can diced tomatoes with lime juice & cilantro
- 1 packet fajita seasoning mix
- 1 cup reserved chicken stock (from the pot)
- Optional: Additional minced garlic to taste

🌮 For Assembly:
- 6–8 corn tortillas
- 1 cup shredded Mexican cheese blend
- ¼ cup crumbled feta cheese (optional)
- Sour cream (such as Daisy)
- Fresh tomatoes, chopped (for garnish)
- Fresh cilantro, chopped (for garnish)

INSTRUCTIONS
1️⃣ **Cook the Chicken:**
In a large pot over medium heat, add olive oil and garlic. Place chicken pieces skin-side down. Season with Mrs. Dash, pepper, paprika, and garlic powder. Add onion, bell pepper, and tomato. Add bay leaf. Pour in enough water to cover the chicken and bring to a simmer. Cook until chicken is fully tender (about 30–40 minutes). Remove and shred the chicken. Reserve 1 cup of the broth.

2️⃣ **Make the Sauce:**
In a separate pan, pour in enchilada sauce. Add garlic, diced tomatoes, fajita seasoning, and reserved broth. Whisk until smooth and let simmer 10 minutes. Add shredded chicken into the sauce and cook for another 5–10 minutes until well coated and flavorful.

3️⃣ **Prepare the Tortillas:**
Lightly dip each tortilla into the reserved broth or sauce to soften. Place on a microwave-safe plate and microwave for about 10–15 seconds if needed.

4️⃣ **Assemble the Tortillas:**
Fill each softened tortilla with a spoonful of chicken mixture. Top with shredded Mexican cheese and a small amount of crumbled feta if desired. Fold or roll the tortillas and place on plate.

5️⃣ **Finish & Garnish:**
Top with more cheese, a dollop of sour cream, chopped tomatoes, and cilantro. Serve warm.

• Mix in fajita seasoning packet
• Simmer on low

3:28 – Add to Sauce
• Add shredded chicken to enchilada mixture
• Stir in 1 (10 oz) can diced tomatoes with lime juice & cilantro
• Add additional broth (1 cup total) and whisk until smooth

4:46 – Strain Juice
• Strain excess liquid from pot
• Return shredded chicken into the rich sauce

5:03 – Prep Tortillas
• Lightly dip 6–8 corn tortillas in strained broth or sauce
• Place tortillas on microwave-safe plate
• Microwave 10–15 seconds to soften

5:57 – Fill Tortillas
• Add chicken mixture to center of each tortilla
• Top with:
- Mexican blend shredded cheese
- Crumbled feta (optional)

6:47 – Fold & Plate
• Fold tortillas gently
• Add extra cheese on top
• Microwave again briefly to melt

7:11 – Garnish
• Top with a dollop of sour cream
