- 1/4 tsp thyme
- Carrots (orange, white, purple if available)
- 1 small red onion (diced)
- Baby Bella mushrooms (cleaned & sliced)
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1 can fire-roasted diced tomatoes
- Splash of red cooking wine (about 1/4 cup)
- 1/4 tsp sugar (to cut tomato acidity, optional)
- Kosher salt & black pepper (to taste)
- Fresh parsley (chopped, for garnish)
- Cooked white rice (or brown rice) for serving

Instructions:
1. Boil chicken with celery, garlic, peppercorns, thyme, and chicken broth for 1 hour until tender.
2. Remove chicken, shred meat, and set aside. Reserve broth.
3. In a pan, sauté garlic, carrots, and onions in olive oil. Add mushrooms and seasonings.
4. Stir in tomato paste, fire-roasted tomatoes, and a splash of red cooking wine. Simmer.
5. Add shredded chicken and a portion of reserved broth. Let simmer until thickened.
