
Easy Homemade Chinese Egg Fried Rice Recipe | 蛋炒饭简单做法
When it comes to Fried Rice, I find myself coming back to this Simple Basic Chinese Fried Rice recipe as the ingredients are always available in my kitchen and easy to prepare. I used dried shrimp but if it's not available you don't have to add it, or you can substitute with prawns, chicken, bacon, ham, Chinese sausage, char siu, siuyok etc.
If you eat at the restaurant or "Tai Chow" the Fried Rice usually taste good because of the hot wok known as "wok hei". In this video I didn't use the Chinese wok, instead I used my normal non-stick pan and it taste good as well.
Important notes and updates:
1. Heat up the wok before adding oil. Make sure the wok is dry so that the oil does not splatter.
2. Using more oil makes it more fragrant but not necessary if you prefer less oily.
3. You can always substitute the ingredients. For instance, the dried shrimp can be changed to prawns, chicken, bacon, chinese sauce, char siu etc. For the vegetables, you can change to other vegetables that do not release a lot of moisture such as long beans, carrots, corn etc.
4. I added chicken stock cubes for additional flavour but normally I don't add.
5. Using lard instead of vegetable oil also makes it more fragrant.
