I made this Braised Mushrooms with Broccoli for my friends recently and they absolutely loved it. This dish is warm, comforting, familiar and delicious. The sauce is fragrant, savoury, sweet with lovely natural umami flavours coming from the mushrooms, garlic and dried scallops.
Is it good?
It's good, it's good!
You can use any dried mushrooms for this recipe.
I won't recommend using fresh mushrooms because the flavour profile won't be the same.
Now squeeze out as much water as possible.
Then remove the stem.
Once all the stems are removed, just set the mushrooms aside.
Now this is going to add so much flavour to the dish.
This is dried scallops and you just need a handful of this.
The dish is going to taste so good.
Just smell it, it smells so good.
First rinse them clean and then soak them in some water.
These have already been pre-soaked.
I think it took about 15 to 20 minutes.
Strain off the excess water.
Then pat them dry with a paper towel.
You want them to be as dry as possible so that it doesn't splatter while cooking.
Now break them up into thin strands like this.
Then set them aside.
If you don't have dried scallops, don't worry.
You can always season the dish with more abalone sauce or oyster sauce later.
Don't throw away the water.
Some of the flavours from the dried scallops have infused into the water
so we're going to use it later.
I'm also going to add some garlic, shallots and ginger for this recipe.
Now all the ingredients are ready, let's start cooking.
Heat up the stove on low to medium heat.
Once the wok is hot, add some oil.
Swirl the pan slightly.
When the wok is hot, add the mushrooms.
Saute on medium heat until fragrant
or you'll start to see the edges of the mushroom turn golden brown like this.
Then remove from the wok.
Add a bit more oil.
Add the shallots, garlic and ginger.
Then add the dried scallops.
Saute on low to medium heat until the edges start to turn golden brown like this.
Then add back the mushrooms.
Add the light soy sauce.
Some Shaoxing wine.
Then add some sugar.
You can actually smell the aroma from the soy sauce and the Shaoxing wine.
Then add some chicken stock.
And the water that was used to soak the dried scallops.
Increase the heat to high and let the water boil.
Then let it simmer on low heat for about 40 to 45 minutes.
Okay, I think it's done.
Smells so good.
Now I'm going to add some cornstarch slurry to thicken the sauce.
Remember to stir the mixture before adding in.
Then I'm going to increase the heat slightly.
So you add the cornstarch slurry until you get the consistency that you want.
So I'm happy with this consistency.
It will thicken more when it cools down.
So I think this is just about right.
Then just add a few drops of sesame oil.
Not too much because it's overpowering.
Just give it a good mix.
Okay, then test to see whether you're okay with the sauce.
It's so good.
I don't think I'm going to add any more seasoning because it's just nice.
You can adjust the seasoning to your taste if you like.
But I think for now, it is really, really good.
The mushrooms are ready.
Now let's make the broccoli.
So have you ever wondered how the broccoli at restaurants looks so shiny and glossy?
There's a very simple trick to that and I'm going to show you how.
First, you need to bring a pot of water to a boil.
Then add oil, some sugar and some salt to the pot of boiling water.
The oil is going to give it that shiny look and the sugar is going to make it nice and crunchy.
The salt just gives it a bit more flavor.
Now let's add the broccoli.
I usually cook the broccoli until it starts to boil again.
When it starts to boil, it means that the internal temperature of the broccoli reaches 100 degrees.
That's when it is cooked.
I like it crunchy.
So if you like it a bit softer, you can continue cooking a bit longer.
You can see that water is now at a rolling boil.
It is done.
Remove the broccoli from the water.
Also, don't overcook the broccoli.
Then it won't look shiny and green.
Then arrange the broccoli on the plate.
So it's done.
I can't wait to try this.
Let me try the mushrooms first.
This is so good.
The mushrooms have absorbed all the lovely, umami, sweet, savory flavors from the sauce.
This is just so delicious.
Let me try the broccoli.
I'm going to dip it in some sauce.
Nice, crunchy.
Tastes so well with the mushroom, braised mushroom sauce.
Don't need to go to the restaurant to eat this.
Just try this recipe and I hope you like it.
See you next time.
Hey, nice or not?
What's that?
Hey, that's my line.
Cheers!
