No flour! No sugar! This oatmeal dessert with carrots, apples, and cottage cheese is incredibly delicious and healthy – completely free of refined sugar and wheat flour. Ingredients:
For the cake layer:
160 g (5.6 oz) rolled oats
170 g (6 oz) carrots
170 g (6 oz) apples
3 eggs
2 tsp stevia or other sweetener (to taste)
1 tsp baking powder
50 g (1.75 oz) walnuts
½ tsp cinnamon

For the apple filling:
600 g (1.3 lb) apples
Juice of 1/3 lemon
200 ml (6.8 fl oz) water
15 g (1.5 tbsp) cornstarch
1/8 tsp vanilla powder

For the cottage cheese filling:
200 g (7 oz) cottage cheese (or cream cheese, ricotta)
100 g (3.5 oz) plain Greek yogurt (or sour cream)
1.5–2 tsp honey (to taste)
1 tsp lemon juice
1/8 tsp vanilla powder

For the glaze:
5 tbsp plain Greek yogurt
1.5 tsp honey (to taste)
A pinch of vanilla powder (to taste, optional)
2 tsp milk
¾ tsp coconut flour (optional, for light thickening)

Baking:
Bake at 180°C (350°F) for 60–70 minutes, until a toothpick comes out clean.
