
Barbados Blackfin Tuna Ceviche (Catch, Clean, Cuisine)

A light day trolling the tuna grounds inshore for schooling blackfin tuna. There's a spot off the west coast here near Sandy Lane called "Daughtons" where blackfin have come to feed between 3:00-6:00 pm every day like clockwork. Most local guys anchor and use live bait (sprats) that brings these fish to the surface. Watching them jump and feed is an afternoon activity I recommend to anyone visiting Barbados. So much fun, especially for kids. We didn't have any live bait so we ended up trolling through the jumping schools with little tuna plugs and landed two for the table. These little "footballs", as they're commonly referred to, make excellent seared tuna medallions and fresh ceviche. Enjoy!
