MIXED FRIED RICE RECIPE | How To Make A Perfect Restaurant Style Fried Rice

Ingredients required for making mixed fried rice recipe - Serves 6 to 7
4 cups/700gms cooked boiled rice. I used 350 gm short grained Sona Masoori (Indian variety) rice. Always cook the rice the night before you plan to make fried rice. In case you forget to do so, cool the rice completely (preferably keep in the refrigerator for a few hours)before cooking the fried rice.
216 gm boneless skinless chicken thighs sliced into very thin strips. You can even use chicken breast. Marinate the chicken with a paste of one garlic clove or grated garlic, 1 teaspoon fresh lemon juice, 1 teaspoon soy sauce, 14 th teaspoon freshly crushed black pepper, 1 teaspoon cornstarch (cornflour) and 1/8 th teaspoon (a pinch) of baking soda (optional).
200 gm medium to small sized prawns cleaned and washed. Marinate prawns with a few drops of lemon juice, 1 teaspoon soy sauce and 1/4 th teaspoon freshly crushed black pepper.

4 large cloves of garlic roughly chopped. Do not chop too fine.
1/2 inch length ginger chopped
1 to 2 fresh chillies (optional)
90 gm or 1 small to medium onion
80 gm or 1/2 of a red bell pepper(capsicum)
80 gm or half of a green bell pepper (capsicum)
50 gm or 1 medium carrot diced
4 to 5 green onions or any green of your choice.
3 tablespoon soy sauce
1 & 1/2 tablespoons mushroom flavored stir fry sauce or oyster sauce or 1 tablespoon dark soy sauce.
1 teaspoon coarsely crushed black pepper
salt to taste
1/2 teaspoon sesame oil (optional)
1 tablespoon of lemon juice to be added at the end
1 tablespoon butter
2 to 3 tablespoons oil
Serve this with stir fried mushrooms/spicy garlic tofu/pepper chicken/fish fry. Recipe links given below.
