How It's Made: Beet Sugar

Sugar beets are grown in loose, well-drained soil, fertilized with organic fertilizer. Sow seeds in the cool season, water regularly. After 5-6 months, when the tubers reach high sugar content, harvest by pulling them up and cutting off the leaves. The tubers are washed, sliced, squeezed to extract the juice, filtered and concentrated. The sugar solution is crystallized into white or brown sugar.
