how you became local teriyak enthusiast
oh my god guys look at that steaming
you've seen this plate before aka
Johnny's Trap Kitchen johnny's Trap
Kitchen oh my god this is the version of
chicken and rice that you need to try oh
that piece with all the skin all the
skin if you've ever visited Seattle you
know that teriyak chicken is king not
only is there an estimated 100 teriyak
chicken restaurants in Seattle proper
but within King County there's almost
200 so why are there so many and what
makes it so good i'm in Seattle with big
time foodie big boy Johnny to figure
this out
all right Johnny our first spot is
Toshio's this is a classic spot tell me
more real quick not just just Toshio is
the Toshios okay the only spot in
Seattle that does skin on chicken
teriyak i would have to say this is the
people's favorite i love myself some
chicken there's teriyaki shops in little
pockets of cities everywhere everywhere
in Washington do you think we could
convince them to to get back there maybe
we could film them grilling i don't know
maybe maybe we'll use a little charm
johnny you're great at asking for things
all right doesn't hurt to ask let's go
all right Johnny what are we ordering
there's only one thing baby chicken
teriyak skin on extra sauce okay that's
what you do
got the goods baby let's go in the car
all right all right we got the goods
baby we got the goods and we're eating
it in the car
og style man that's a extra plate so
what you got the uh is this salad
dressing yes so every plate of Seattle
style teriyak comes with uh usually
iceberg or cabbage lettuce mostly
iceberg lettuce with a very sweet and
tangy kind of mayoy
sauce i love it i love it very very good
very good very good very addicting and
this isn't your regular sauce like the
way they do it look it's a little
gelatinous oh look it almost looks like
it has some collagen in it i was like
well I'm trying to look at myself you're
holding it up to the screen yeah I got
the extra sauce just so you guys could
see it but there's a lot of sauce on
that thing already you know what we
usually we just cut the top and use it
as a plate but this plastic so as I saw
so they actually had almost the chicken
I almost want to say braised and then
they put it on the grill just to char it
it's like pre-cooked and then for
process of making it quicker yes but
this is the only spot in Seattle that
will do skin on nowhere else does skin
on this is by far I would say the most
popular teriyak spot in Seattle we got
plenty of pocket plenty of pockets you
like it the sauce it's different from
when you remember in college huh yo this
is good i'm telling you did they say
this fell off they said it's not some
Some people say it tastes a little bit
different but the nostalgia is still
there no one is still doing this let me
just show you guys the pieces of floppy
chicken with the skin top tier i like
chicken with the skin on i think the
skin has all the flavor yep i think it
has extra fat juiciness tenderness
juiciness it kind of locks everything in
yep oh man the char the char on the skin
go ahead get the salad
it's that fresh vibrance that you need
to just cut that sweet richness from the
chicken brother I don't even want a
piece i just want to watch you eat it i
would say the sauce is a little bit more
on the saltier side but not in a bad way
cuz I've had other teraki chickens
they're almost too sweet
so I kind of like that it's kind of
tingling my mouth a little bit like with
a tang right yeah so the thing about
this you guys if you guys don't know
about Seattle style teriyaki chicken
it's like New York pizza every pocket in
every city is going to do it slightly
different their sauce might be a little
bit different the ingredients might be a
little bit different this right here I
would say is top tier who Who would you
say is like the top tier pizza place
that people is the people's favorite
people i mean in New York you got to go
Joe's scars um there's Upside there's
This is like that mama Toshio's is like
that for us out here if you are in the
Seattle area in the South End area this
is what you want to try question i think
the chicken I give it honestly I I can't
give it five out of five yet because I
got to leave room for improvement this
is a 4.5 it really doesn't get much
better than this i'm sad to say that the
other places we go to might be a little
bit different experience for you we'll
see but what do you think about this
rice it's a little wet this rice is a
little wet i think the rice could be a
little bit more uh dry like you're
saying because you're putting sauce on
it and I feel like when you put sauce on
wet rice it just gets a little too mushy
that's like the only complaint though
all right they might lose 0.25 points
okay for the squishiness of the rice but
the salad is good everything's good
everything's hidden i like to eat a
little bit of salad with the little
chicken piece salad cleanser oh my god
this is the version of chicken and rice
that you need to try toshios fresh toios
yeah oh that piece with all the skin all
the skin i I got the lyrics in my head i
just don't got the the vocal cords for
it no shame
this is delicious so nostalgic toshio
this is just the beginning spot but I
got to say honestly if you come get
teriyak this is the de facto teriyak
spot and it should look like this rice
salad chicken if you're visiting Seattle
before you go to Space Needle before you
go to Pip Place Market stop by Toshios
get you some chicken teriyak for lunch
you won't be disappointed
perfect food for the car comfort food
easy cheap high protein good
macros you don't have to eat all the
rice if you don't want to come on
delicious all right we're pulling up to
Toshi's toshi's one of the Oh this is
not a standalone this is a This is the
name of uh the godfather the godfather
of Seattle style teriyaki all right all
right all right we're here at Toshi's
and uh yeah we're going to find out if
it is like related to the original
Toshi's you don't even know cuz the
original Toshi Toshi Kasahara by the way
the godfather of Teryaki he has one
location that he actually reps which is
in Mil Creek but but this I heard that
this is part of a chain which would be
his chain yes but maybe it just looks a
little different he's licensing it out
you know the name just so people get a
little buzz but uh let's still hit this
we got to do some journalism here all
right man got the goods for this Toshi
found out that this is actually not the
same as the original Toshi's is its own
brand and there's a lot of Toshi's out
there apparently so uh it's okay we'll
still try it there's a pocket of Toshi's
everywhere in Seattle so we're going to
give it an honest review absolutely all
right so this was kind of like a typical
teriyak shop you know it had uh also
some other you know katsu uh items on
there it has some Chinese items orange
chicken of course you know spicy chicken
which I did get because I just wanted to
try it i'll let you do the honors all
right toshi's but not the original
Toshi's dang we just couldn't go up to
Mil Creek today oh just switched it up
on you guys got a little spicy chicken
this looks pretty good though this plate
is very hot yo this is a lot of chicken
there's a lot of chicken a lot of weight
whole thing is chicken this is one of my
favorite spots honestly I feel like they
do right with the rice and this is the
Oh so you come here i come here cuz it's
closest to the office that I like so
usually chicken teriyaki comes boneless
skinless marinated chicken thighs that
are filleted so they're evenly cooked
yep that's why you see what it is this
is the most common chicken teriyaki
you'll find in Seattle and I got the
slight the spicy side with the teriyaki
now let's try the teriyaki side real
quick it doesn't look as saucy maybe not
as salty but still actually wow this
chicken is bouncy and it's fresh this is
not that chicken that was sitting around
under the lamp that they just regrilled
there you go
m not as saucy still got a nice little
char no skin on it the sauce is not as
strong which I don't mind but it I guess
it lets the uh chicken thigh flavor
shine yeah the char the char okay let's
try the And like we said every salad
iceberg salad comes with the white
dressing nice tangy sweet let me try
this spicy why can't I say it like that
spicy chicken very spicy very delicious
i can't tell if that's a Chinese or
Korean accent i can't tell either but
most Koreans are the ones owning these
teriyak spots nowadays too tell me about
how you became kind of like a local
teriyak enthusiast oh my god it started
from a childhood started when I was a
wee lab no I know we did the video but
like recently your last couple years I
mean what what has propelled you man
last couple years I took a a huge mental
break as you guys don't know if you guys
know but I was doing a food truck called
Big Boys Burger took a huge mental break
from my my health and just kind of
figuring things out i was like what's
the next move what's the next project
and I was actually presented um an idea
i believe in all of those things and I
want to bring it to the rest of the
world and that's why I started studying
this yeah you a man on a mission man
absolutely baby and you guys are gonna
be along the way i love it so you like
this you like this wait till you taste
the turnup we got phase one R&D coming
soon baby i'm not going to lie this one
surprised me man for for a fake Toshi
this is good and you know what's good
about it too is that every single spicy
is a different recipe so like no one's
going to do the same spicy it's always
going to be a little bit different
everywhere you go you know you can never
underrate how important it is this
chicken tastes like it's freshly cooked
from raw it almost I I What do you think
it was without the poultry taste i feel
like sometimes when you cook it too raw
you can kind of still taste that weird
poultry taste but this is Yeah this is
feels like it was raw to the grill i
said 4.5 i think the skin on adds more
flavor yes like I said the toios was a
little bit saltier yep flavor-wise I
love how they let the chicken thigh
shine and the char is still good and
there's a ton of food if I had to be
honest Toshio's the first spot we went
to is more technically unique absolutely
it's more different than the other
teriyak and I tell you that for a
standard plate I would call this a
standard ter plate this place is good i
was about to curse we're going to bleep
it out anyways this spot's [ __ ] good
this spot is [ __ ] good for a regular
spot let me Let me You know how you
addressed the rice last time let's
address the rice it's actually a little
bit grainier yeah it's a little bit i
think it could be slightly wetter a
little bit more moist i like but it
compliments it well when you have
marinated meats you can't have dry rice
i'm just going to put out there right
now if you ever go to your Korean
barbecue spots and stuff like that your
rice is not dry yeah so I'm I'm checking
the stickiness of this rice let's do a
rice sticky test it's true here um so
the the previous rice at Toshio's was
had way too much moisture yes and was on
the mushy scale ranking too high
absolutely here i would say maybe it's
right there on the edge of not being
mushy enough it's a little bit dry look
like look it kind of comes together they
probably have this for their fried rice
the next day they know they got to make
fried rice and like we got to keep the I
just know that if you stick this rice in
the fridge for like overnight it's going
to be you're going to have to steam it
up it's going to separate yeah yeah yeah
it's berry and check it out at Fred
Myers solid all right you guys we're at
Saru Japan they are the teriyaki chicken
i think most people know but are they
the best or they just people's favorite
extra sauce yeah I like that he He ready
to be a star he ready to be a star all
right so we're going to eat this in the
car but I think it's only right that we
eat the mall chicken at the mall so guys
look at that steaming you've seen this
plate before last time I remember the
chicken is like kind of mushy it's
slightly like a corn starch type of like
All right so what do you think about the
the veggies here they don't do the salad
they give you the steamed cabbage that's
shredded all when I think of this the
first one I think is just process just
process process process let's make it as
easy as possible right saru Japan the uh
a lot of people's original teriyak
chicken this is what people are most
familiar with when they think teriyak
chicken good old Saru solid that's like
the only thing you can take solid it's
salty saru it's salty it's not too sweet
it's definitely more on the saltier side
um there we go
it's definitely more unique in the way
that is uh kind of cooked but I I
wouldn't say that this is authentic
Seattle style teriyak chicken but I
think anybody that calls teriyak chicken
teriyaki chicken is literally just
grilled chicken then putting sauce on it
right so technically this is teriyak
chicken i'm not going to lie for 10
bucks it's not a bad deal they obviously
give you a heap of right this it's
mostly rice yes so for $10 the overall
plate is cheaper but they probably
didn't give you as much chicken as like
the last Toshi spot i bank on you
ordering the double i will say this
beats a nonfresh teriyak joint yes
meaning that I think the hotness and the
freshness gives it so many points here
that even though I don't think the
chicken is the best or I don't love the
sauce the fact that it is fresh indeed
and that sometimes at the other teriyak
joints you will get chicken that has
been sitting around for a while that's
reheated real quickly that's the worst
that's the worst which I understand
listen people got to run businesses they
have systems there's not maybe their
business is not super busy but Saru is
running through this chicken and it's
always hot off the grill so I got to
give it a 3.75 i like the salad but I
like that they give you a complimentary
uh cabbage all right everybody our last
location is an undisclosed location
somewhere in Reton but aka Johnny's Trap
Kitchen johnny's Trap Kitchen johnny so
we had teriyak chicken yeah at all these
different spots but now we're about to
have I guess my rendition of teriyak
chicken man what I think would make it
just a little bit better all right let's
take a look guys what do you mean
rendering we got to make sure the skin
is crispy we're rendering this is the
R&D phase part one and uh I'm so happy
that you're here to try it man i can
hear it all right moment of truth come
on come on we got the marinated side
skinless right here boneless and then we
got the skin on boneless non-m marinated
okay this is a nice char yeah y'all like
that wet wet huh
all right man i'm so excited for you to
try this i know you you probably
teriyakied out from today but you call
it secret teriyak is that the name
unmarinated chicken yep uh with the skin
on and then you have uh marinated
chicken skinless boneless and then you
have the chicken skin right here and
then you have I'm trying to play around
like I said this is R&D phase one you
guys are a part of it i'm going to have
a popup soon so stay tuned to me I'm
saucing that thing down baby
okay cooked perfectly crispy that salty
and that saltiness and the skin was
still there and it made it crispy one
more
bite the rice came out in between less
moisture than toios in the beginning but
not falling apart still clumping
together
m on a little bit sweeter side
charred marinated
i love sauce so you guys going to get a
sauce perfectly bro so my favorite bite
so far is the skin on with the sauce i
get the different textures i get the
crispy skin fattiness and then I hit
that salt skin which you salted the
chicken earlier not to give away all the
palette dude i think the marinated
chicken is also comparable to some of
the other spots I've had but the skin on
is is the
standout allar i would say texture-wise
it's a max salad that little extra hint
of pepper I think is nice and I think it
pairs really well it actually is the
most peppery thing of everything here
there's no pepper in anything else yeah
small sauce $9.99 on Amazon it won't be
$9.99 forever guys because $9.99 is very
cheap let them know
try the max salad with some smalla cuz I
know you know your mac salad is good try
it with some smala cuz I think smalla
goes with mayo very nicely wow i know
the smal is like sheswan inspired oil
but it gives it more of an American
taste for some reason it definitely made
it a little bit more Americanized for
some reason which is very odd it's funny
cuz we grow up eating so much teriyak
chicken in Seattle and we don't think
too much about it until you leave and
you realize wait New York LA they don't
really eat teriyak chicken like this no
they don't have just teriyak spots so we
don't really think about it that it's it
is one of those uniquely Seattle super
west coast maybe Hawaii but mostly
Seattle things another chicken and rice
everybody loves chicken and rice hello
guys chicken and rice something
different is teriyaki chicken and rice
exactly so I just wanted to get down the
base first and then I'm going to turn
this thing up different sauces maybe
different flavored rices right i don't
know yet but I want you guys to be a
part of the R&D so the pop-up I'm going
to get a lot of you guys' feedback and I
really want it to come from people from
Seattle no so the pop-ups are going to
be in Seattle based and I haven't made
an announcement yet but please stay
tuned to Big Boy Johnny on Instagram or
Secret Teriyak that's where I will make
the announcements but I'm super excited
to present this to you guys man I think
that teriyak it seems like just a basic
thing that you just overlook and take
for granted it's good out here it's
different all right everybody thank you
