
My grandmother showed me how to prepare cauliflower in a whole new way
Discover an extraordinary vegan dish: roasted cauliflower refined with an aromatic coffee-tahini glaze, garnished with fresh pomegranate seeds and chopped pistachios. This recipe combines unique flavors and offers a very special taste experience.
📋 INGREDIENTS:
• 1 small cauliflower (approx. 500 g / 1 pound)
• 2 tablespoons olive oil
• ½ teaspoon salt
• ½ teaspoon smoked paprika powder
For the coffee tahini glaze:
• 2 tablespoons tahini
• 1 tablespoon maple syrup
• 1 teaspoon soy sauce
• 1 teaspoon freshly brewed espresso or strong coffee
• ½ teaspoon lemon juice
• 1 pinch of cumin
Toppings:
• 3 tablespoons pomegranate seeds
• 2 tablespoons chopped pistachios
• Fresh coriander or mint leaves
Roast at 200°C / 392 °F (top/bottom heat) for about 25 minutes until slightly crispy.
Serving suggestion: This dish goes well with hummus or toasted flatbread and is suitable both as a main course and as a special side dish.
