Paprika Chicken with Cilantro Coconut Rice

Rice:
3 Cups Basmati Rice
1 cup Sweetened Coconut
1 tbsp grated frozen ginger
1 jalapeno, diced
3 tbs extra virgin olive oil
1 can of coconut milk + 3 cups of water
1 tsp salt
2 cups packed cilantro
4 scallions chopped
Soak Rice in cold water for 30 mins and then drain. Toast Coconut in oven for ten minutes at 350 degree oven. Cook ginger and jalapeno in 1 tbsp oil for 2 minutes. Add Rice and cook until fragrant (about 2 minutes) Ad water and coconut milk and ½ tsp salt an bring to a boil. Reduce heat and cook for 12-to 15 minutes.Pulse together in a food processor coconut, cilantro, and scallions, 2 tbsp oil an ½ tsp salt. Add to cooked rice.

Season Chicken with salt, pepper, Olive oil and paprika and sear in pan until done!
