Autumn Chicken and Rice Soup Recipe
Ingredients

1-1/2 Tablespoons extra virgin olive oil (enough to coat the pan)
1 small-medium yellow onion, finely chopped
2 large carrots, finely chopped
2 celery stalks, finally chopped
3 cloves garlic, pressed or minced
salt and pepper
2 chicken breasts
8 cups chicken stock or broth
1 cup long grain white rice, Lundberg recommended

Directions
Cook the chicken breasts in a large pot of water until thoroughly cooked (you will use this liquid for your soup!
Heat extra virgin olive oil in a large soup pot over medium heat. Add onion, carrots and celery....season as you go! Stir to combine. Saute until vegetables are very tender, 5-7 minutes, stirring occasionally. Add garlic then saute for about one minute.

Add chicken broth and bring up to a gentle boil. Add rice then stir to combine. Season chicken with seasoning salt and pepper then add to the broth and stir to combine. Turn heat down to medium then simmer, uncovered, until rice is tender, 15-20 minutes. Taste then add more seasoned salt and/or pepper to taste, then ladle into bowls and serve.
