Ava, it looks great there. And if you're hosting the Thanksgiving meal or bringing the wine
Anyway, you want to create an experience that makes the whole table feel grateful, right? So we've got Kyle
Schwartz and I have this practice you tell me
Schwartz and Druber the executive chef of table 301 restaurant group is here along with the beverage director Joe croissant. Welcome to you both
This is gorgeous. Awesome. Thank you for having us first chef Kyle. You've got some amazing Thanksgiving staples here
These are available as Thanksgiving to-go offerings. So what are the basics? Okay start off. We have a whole roasted oven turkey
Mm-hmm. Nice crispy skin
Beautiful juicy turkey. Yeah better than a lot of us most could dream of doing at home probably sure
Cornbread stuffing a twist to a traditional stuffing and then we also have a sweet potato with candy pecans on it
Oh really really beautiful mac and cheese just the basics and then you've got some some unique items too that people might not think to
Make yeah, we have one which is a staple at Sobeys. It's a sweet corn mock shoe. And then we also have a roasted root vegetable
Medley and then yeah, we also have a vegan option, which is a beet Wellington not to be confused for beef
Well, not beef Wellington beet Wellington, but a lot of people love that, right?
Yeah, and then of course a grand dessert is makes a really grand finale and it's famous right there
Sure, you always need a sweet treat to finish it off and we have Sobeys famous
White chocolate banana cream pie and also the traditional pumpkin pie
Yeah, people people love all these staples, but you know, it's a lot of work to get it together
So you wanted folks, you know
They could order the full meal through table 301 or they could pick out individual dishes to complement their holiday meal if they don't want to
Make every single thing the deadline is November 18th. These are fully cooked. The host just reheats them
What what kinds of reactions do you get from this?
Oh people are very excited because you know people like making their own turkey sometimes
But then they're like I can't make stuffing and I would rather have a professional do it
and that's where we come into play and
You could order anything individually or you could order the whole set and just enjoy time with your family instead of spending it in the kitchen
Right. I mean and you know how much time can be spent in a kitchen?
So it's this time of year. They're a little bit stressed out
Anyway, trying to get all the details together. They can just and they could pass this off. This looks beautiful
Like yes, you know homemade would be now because certain foods do pair so well with certain wines
We want to talk about wine pairings
Joe croissant the beverage director here to talk about
What wines go with what foods what do we need to think of overall on Thanksgiving first?
Thanksgiving is pretty tricky because there's so many dishes normally if you have a plate, it's maybe two three four components
Thanksgiving there's like 15,000 roughly. Yeah
Turkey is a really low-fat item
So red wine, but something light like Pinot Noir Beaujolais that has light tannin moderate to high acid pairs really well
So if you're if you're gonna go red do it really light
Yeah, you say for the most part this is a time to explore some some whites. Yeah whites roses with the stuffing
I like converts remainder
Alto adagio is in northern Italy. It literally has spice in the name. So the nice spicy
Stuffing you have a nice spicy wine that goes with it
Vegetables I drink sancerre sancerre is in the lower Valley of France. It has like a natural green herbaceousness to it
So if you have nice vegetables Brussels sprouts those sorts of things and drink that kind of wine that brings that greenness to it
And you can do some exploring this way. Maybe people who want to learn more about the wine pairings
There's a fun event coming up Tuesday next week at Avenue
I've talked to us a little about table 301s annual retail wine sale people love this, right?
Yep
so what we do is we get together a bunch of
Our partners that sell us wine and they all bring wine and then we also bring the wine as well
So I'll be there talking about wine if you want to sometimes I sign autographs while I'm there very rarely
And we'll have about 80 bottles. It's $30 a ticket and
If you buy a case you get your ticket price back because the fact is if you have a beautiful spread of wine
You can get away with a lot of things on Thanksgiving virtually anything. Yeah, virtually anything or pick up
This is great ideas easy to pick up. We appreciate it. Thank you guys for both coming in here access carolina.com
We'll have the information for the the wine event and chef Kyle getting ready for the big meal. We appreciate it
