So I came from a career of technology.
First restaurant in a country where I don't speak the language.
This is what a hamburger looks like.
Like, I want to work here.
Perfect.
It's very good.
It's good.
Bacon, cheese, and mushroom egg, doubled.
The best burger I can make, do the best I can every day.
Thank you.
So it begins.
We're the only three people who can't look.
My little family.
Hi, good morning.
Hey.
Good morning.
I just woke up.
I understand.
Yeah, they come during COVID.
Okay, Martinez came and brought more players and more players and more players over the last two years.
100% Angus beef.
Angus beef.
Yep, from America.
I get this every other day, and from this I'll cut it into steak and grind it.
This is chuck.
Chuck.
Chuck eye.
And then this one is brisket.
So I mix two different kinds of meat, chuck and brisket.
To give it a good flavor, I think.
Thank you.
Yeah, this is brisket.
So this is much darker, much more beefy flavor.
And the fat is hard.
So it makes a good juicy burger.
I want them to feel like they're eating a steak.
This is such good meat, I don't want to smash it up too much.
So I want a good bite, I want them to feel like they're eating steak.
Local source.
So everything from local farm, local business, small business, small farm.
I came from technology.
I was what's called a systems integrator.
Just cooking as a hobby.
When I decided to come here with my wife, I decided this would just be something fun to do.
No restaurant experience and really no business experience.
In a country where I don't speak the language, I stood outside many times trying to get people to come in.
Rain, sun, hot day, cold day, didn't matter.
Just stood outside with a little shop card saying, come on, come on, I make a burger.
Come try it.
And I learned Japanese a little bit as I went.
Learned how to say, you know, homemade or chikase, Tezukuri.
Finally people started to show up.
So I thought, you know, why not do some comfort food for people that live here, might be foreigners.
And then also just to bring the feeling of California and burger culture, burger lifestyle to Japan.
If you really enjoy it, if it's a hobby, it's fun.
It's fun to come to work.
Some days you don't feel like it, but as soon as the lights come on, the people come in, the grill fires up, you start smelling it.
All the problems in the world go away.
Definitely some parts of America have their own style.
I traveled around judging barbecue.
So I've eaten all kinds of barbecue.
So my barbecue sauce and my food is based on my experience eating those.
So the barbecue sauce is my own.
It's my recipe.
I make everything home, original.
No coffee.
I don't coffee anybody.
I just make what I make.
It's my grandmother's recipe.
And she's a pretty smart lady.
So I think the hard thing to do with children is to get kids to eat cabbage and carrots.
So she made it a little bit sweet.
Kids eat it.
Smart.
Why are you angry?
I went to high school and college in California.
I was originally a customer here.
I started eating here last year.
I was also a customer.
I was like, this is a hamburger.
The homemade barbecue sauce was so delicious that I couldn't understand the meaning.
I started eating here about a year ago.
We don't look alike at all.
You're my father.
My little family.
And since he remembered.
Very soft touch.
I don't over mix.
I don't want it to break down.
I want it to stay like this.
I don't want it.
Every week.
24 kilos a week.
I make 24 kilos.
I couldn't find any bacon that tastes like this, so I made my own.
Same as the burger, right?
Everything is the same.
It's the process of your original.
Yeah.
It tastes so good.
It's better than made in store.
And no preservatives, organic.
I touch every piece.
So I know there's no extra in anything.
I know what it is.
A lot of work.
Nobody is particular about this.
That's true.
100%.
So it begins.
Bacon started.
And then that's not good.
That's my sign.
It's a little burnt.
It's crispy.
It's a little burnt.
I think I'm particular about this.
I like this texture.
Kamban time.
Chihuahua.
Hello.
Her huge.
She got your text.
Her huge.
Here's our fish.
Swimming.
When it floats.
Drowning it.
Doing it.
Yep.
Oh, I know.
Isn't that a terrible thing?
Yeah.
You would think they would make that a small one.
Kampeki.
Sorry.
Kampeki.
Okay.
Thank you.
Have a great day.
Thank you.
I was on TV.
And they were so excited.
That I was cooking.
Here you go.
Bacon cheese.
Mushroom egg.
Doubled.
I strive for perfection, so.
Yeah, I'm all about that balance.
Your tongue has five tastes.
Right?
Amai, shio, nigai, supai, and umami.
So that burger you ate has a good balance of all.
So not one or the other.
I'm looking for something simple, but delicious.
Might be a bit much.
You said you're hungry.
I'm feeling hungry.
Can I get a double burger?
Okay.
Wait.
Before you do that.
How long has it been since you had a big burger?
Okay, that's enough.
Wait, no, no, no.
It's been only about two weeks.
I live in Yokohama.
And I've been hitting like all the burger places.
Like that in Tokyo.
All like the small shops like this.
Okay, so.
Then I suggest.
Can you do a little bit spicy?
Yeah.
All right, so I suggest you get two singles.
Okay, two singles.
One bacon cheese.
The one I'm famous for.
And then when I suggest.
I just.
It's the best thing I've ever made.
Okay.
Off menu spicy burger.
I'm from Hawaii, so.
Oh, wow.
Oreo.
Not it.
Me too.
No ----?
No ----.
Here you go.
I find that.
They understand the culture.
That's a better word.
They're not pasta?
They are.
Oh, okay.
Oh.
Spicy.
You getting it?
Oh, yeah.
Let's put them in the sink.
Towels.
No, that's good.
Especially the bacon.
The real American series.
Yeah.
I'm sorry.
Oh, my God.
It's been so long since I've had crispy bacon.
And not ham.
Mike.
What?
It's very good.
Very good.
It's better than Five Guys.
Special off menu.
His creation.
His recommendation.
Yeah.
So, my wife's home.
Oh.
So, happy wife.
Happy wife.
I can make soft bacon.
And then tell their family.
And then next time they can come over and I'm ready to come over.
Close the Hawaiian Mafia.
Perfect.
Very perfect.
Wow.
Yay.
So, wow.
Have a seat.
Yeah.
Costco food.
How old were you?
Yeah.
Really?
So, can you make...
Yeah.
Four and...
Looks kind of really pretty, right?
I think.
It's kind of...
It's too dry.
Ah.
This looks kind of where the bacon's at.
Yeah.
Done?
Yeah.
All right, go for it.
So, you throw it away there.
Oh, okay.
Down.
All y'all.
To the airport.
Okay.
Yes, sir.
Jackson Brown's Reef from the Big Island brought it to Kohala.
Very...
From Hapa.
Flannery.
I follow you on Instagram.
Oh, cool.
I've seen this before.
My scrub is like...
I care about what I'm doing.
I'm not just doing this for money.
I'm old enough.
I don't really need a lot of money anymore.
So, just make the best burger I can.
Do the best I can every day.
