"In winter, when the air is very cold and dry, it is sometimes possible to see evaporation mist over the surface of a lake. This gives the impression that the lake is "smoking" just above the surface.

Evaporation fog occurs when continental subpolar air or continental arctic air masses move over relatively mild water surfaces. As the cold air can absorb less moisture than the warm air, the continental (dry) aspect is important. It allows a sufficient amount of water vapour to evaporate and condense to form 'smoke'.

In most cases, a temperature difference of at least 10 to 12°C between the water surface and the air mass is required for evaporation fog to form. This unstable profile, fuelled by the transfer of sensible and latent heat from the water to the cold and dry air, gives the "smoke" an often turbulent appearance. Over the North Sea, Baltic Sea or Atlantic Ocean, it can even be accompanied by small heat storms, but not over Swiss lakes.

Evaporation fog usually develops in late autumn or early winter with the arrival of the first really cold air masses, when the water in the lakes is still relatively warm and not yet frozen. It can occur both when there is a strong wind, such as an iron current, and when there is no wind." Source: MeteoSchweiz
