Sambal sauce is our fridge must-have seasoning sauce, no matter eat with fried noodle, fried rice or stir fry with vegetables, it always a great match. A very tasteful Malaysian hot and spicy condiment.
How to make a delicious Sambal Belacan? This Sambal recipe is hand pounded and charcoal roasted flavour. We always heard from older say that hand-pounded Sambal Chili is more delicious, and the charcoal roasted Belacan is more fragrant.
My grandma living by the sea and neighbourhood had a Belacan factory.
In my childhood memory, always smells something salty and fishy in the air while enjoying my holiday at grandma house and my mom always wanted to wash again all my clothes when I reached home.

🌱 INGREDIENTS
15g-------Belacan
3pcs-----Bird's Eye Chili
2pcs-----Red Chili
1pc-------Green Chili
3pcs-----Cherry Tomato
1pc-------Shallot
1clove---Garlic
2pcs------Calamansi
1pc--------Limau Purut Leaf
1tbsp-----Palm Sugar
A little Sea Salt
👩🍳 INSTRUCTIONS
1. Toast or Roasted the Belacan, Cherry Tomatoes, Garlic and Shallot until fragrant.
2. Pour some hot water to Limau Purut Leaf to make it cooked and fragrant.
3. Put diced chilli into stone pounder, then add in roasted belacan, Cherry Tomatoes, Garlic and Shallot.
4. Pound until fine.
5. Add in Calamansi juice, palm sugar and sea salt.
7. Mix well and ready to serve.

叁巴馬來盞做法有很多,但我們最常聽聞老一輩的人說手錘的參巴辣椒醬會比較好吃,而用炭火烤的馬來盞也更香。
居住靠海的外婆家隔壁是马来盏的作坊。
在我童年記憶裏,放假到外婆家玩後空氣中瀰漫的鹹腥味兒總把衣服薰得鹹香鹹香的要媽媽把衣服洗多一遍。😂

🌱「食材」
馬來盞 15g
紅辣椒 2 根
青辣椒 1 根
小辣椒 3 根
櫻桃番茄 3粒
小紅蔥 1粒
蒜頭 1粒
酸柑 2 粒
泰國柑葉 1片
椰糖 1 湯匙
海鹽 適量
👩🍳做法:
1. 將馬來盞,櫻桃番茄,蒜頭和小紅蔥烤香。
2. 少許熱水沖燙泰國柑葉,並切絲才放入石盅。
3. 把辣椒切小塊才放入石盅錘打,再加入烤香的馬來盞,櫻桃番茄,蒜頭和小紅蔥。
4. 錘好後再放入酸柑汁,椰糖和海鹽。
5. 攪拌均勻就完成啦。
