英式司康與檸檬司康食譜(6顆量):
1.中筋麵粉225g
2.室溫奶油60g
3.泡打粉7g
4.糖54g
5.鹽1/4t
6.雞蛋27g
7.牛奶80g(鮮奶40g+牛奶40g)
8.檸檬皮1顆
9.檸檬汁約15g(視麵粉吸水狀況添加)
10.糖粉-適量
司康作法:
1.將檸檬削皮一顆備用
2.檸檬擠汁備用
3.檸檬切片0.2cm 共3片備用
4.麵粉與泡打粉過篩
5.加入糖與鹽攪拌均勻
6.加入室溫奶油用切拌方式讓麵粉沾附奶油到鬆散狀態
7.用手搓揉粉油到鬆散狀態
8.將麵團分成兩份,一份作原為司康,一份作檸檬司康
9.將麵團用壓折方式揉成2cm厚度麵團
10.用模具壓成想要的大小司康麵團
11.另一半檸檬司康加入檸檬皮與約8-10g檸檬汁
12.將麵團用壓折方式揉成2cm厚度麵團
13.一樣用模具壓成喜愛大小的司康
14.將司康塗上蛋黃液或鮮奶油
15.檸檬司康上貼上檸檬片,撒上糖粉
16.烤箱預熱190度,司康放中層用180度烤18-20分鐘至司康頂部上色
攪打擠花咖啡食譜:
1.即溶黑咖啡3湯匙
2.糖3湯匙
3.熱水3湯匙
4.牛奶一杯
5.冰塊-適量
擠花攪打咖啡作法:
1.將即溶黑咖啡、糖、熱開水依序加入
2.第一階段開始攪打到影片中的狀態
3.牛奶加入冰塊,在上層鋪上攪打咖啡
4.再將剩餘的咖啡打發到硬性發泡
5.用擠花嘴擠出玫瑰花,放在咖啡上即可
British scones and lemon scones recipe (6 servings):
1. All-purpose flour 225g
2. 60g room temperature cream
3. Baking powder 7g
4. Sugar 54g
5.Salt 1/4t
6.Egg 27g
7. Milk 80g (fresh milk 40g + milk 40g)
8. 1 lemon zest
9. About 15g of lemon juice (add according to the water absorption of the flour)
10. Powdered sugar-moderate amount
Scone's approach:
1. Peel a lemon and set aside
2. Squeeze lemon juice for later use
3. Lemon slice 0.2cm, 3 slices in total
4. Sift the flour and baking powder
5. Add sugar and salt and stir well
6. Add room temperature cream and cut and mix to make the flour stick to the cream until it becomes loose
7. Knead the powdered oil with your hands until it is loose
8. Divide the dough into two parts, one for the original scones and one for the lemon scones
9. Knead the dough into a 2cm thick dough with a crushing method
10. Use a mold to press into the desired size of scones dough
11. Add the other half of lemon scones to lemon zest and about 8-10g lemon juice
12. Knead the dough into a 2cm thick dough with a crushing method
13. Use the same mold to press into a favorite size Scon
14. Coat Scone with liquid egg yolk or whipped cream
15. Paste lemon slices on the lemon scones and sprinkle with powdered sugar
16. Preheat the oven to 190 degrees, put the middle layer on Scam and bake at 180 degrees for 18-20 minutes until the top of Scam is colored
Whipped squeeze coffee recipe:
1. 3 tablespoons of instant black coffee
2. 3 tablespoons of sugar
3. 3 tablespoons of hot water
4. A cup of milk
5. Ice cubes-moderate amount
How to squeeze flowers and whipped coffee:
1. Add instant black coffee, sugar and hot water in order
