今天要分享的是巴斯克蛋糕(發源地西班牙的原食譜),這款蛋糕起源於西班牙聖塞瓦斯蒂安區的蛋糕店La Viña,當時廚師老闆聖地亞哥·里維拉, 正在尋找可放入菜單的新甜點,他與美國風味的紐約芝士蛋糕相比,口感比較緻密而且結實,在外層還包裹了餅乾碎,而老闆就將紐約起司蛋糕的配方做了調整,改為了有獨特香氣,透氣性與奶油味的巴斯克乳酪蛋糕,配方配料很簡單,在家也可以輕鬆製作,如果想要跟在西班牙一樣道地, 吃芝士蛋糕時可以配上一小杯西班牙雪利酒~
雖然不能出國,但能在家享受一樣的道地口味~
❦如果食譜想改為不含麩質的配方,只要1:1更換不含麩質的麵粉代替就可以了
❦如果想添加其他風味,製作時也可以加入柑橘皮、檸檬或橙皮也可以添加波旁威士忌,來增加風味,只要將3湯匙鮮奶油換成3湯匙威士忌就可以了

6吋蛋糕食譜:
1.奶油奶酪 363g
2.三溫糖 132g
3.全蛋 2顆
4.鮮奶油 200g
5.天然海鹽 1g
6.香草精 1茶匙
7.過篩麵粉 19g
做法:
1.將烘焙紙放入烤模備用
2.將奶油奶酪微波軟化,攪拌到滑順
3.加入三溫糖與鹽,攪拌到糖完全融化
4.全蛋分兩次加入,攪拌到完全吸收,再加入另一顆全蛋攪拌
5.加入鮮奶油、香草精攪拌到完全融合
6.加入過篩後的麵粉,攪拌到質地均勻
7.將攪拌棒放入烤模內,麵糊由上倒在攪拌棒上避免過多空氣入模
8.烤箱預熱250度,入烤箱時放下層改為220度烤25-30分鐘
9.最後將蛋糕移至中層烤約5分鐘,讓頂部上色
10.出爐放涼後再脫模
6-inch cake recipe:
1.Cream cheese 363g
2. Three warm sugar 132g
3. 2 whole eggs
4. 200g fresh cream
5. Natural sea salt 1g
6. 1 teaspoon of vanilla extract
7. Sift flour 19g
practice:
1. Put the parchment paper into the baking tin and set it butaside
2. Microwave the cream cheese to soften and stir until smooth
3. Add three warm sugar and salt, stir until the sugar is completely melted
4. Add the whole egg twice, stir until it is completely absorbed, then add another whole egg and stir
5. Add whipped cream and vanilla extract and stir until fully integrated
6. Add the sifted flour and stir until the texture is even
7. Put the stirring rod into the baking mold, and pour the batter from the top on the stirring rod to avoid excessive air entering the mold
8. Preheat the oven to 250 degrees, but the lower layer into the oven and change it to 220 degrees and bake for 25-30 minutes
9. Finally, move the cake to the middle layer and bake for about 5 minutes to let the top color
10. Release the mold after letting cool
