I have a little something in mind for Christmas Day morning and that is a breakfast trifle,
fresh and fruity. It starts off with sponge fingers, some frozen berries, just mixed,
some are fruits but it's winter. Oh it's so lovely and I don't want to get rid of
the sharpness too much so instead of sugar I'm adding some fine shred marmalade,
clementine zest. I mean it's smelling very Christmassy already. Now I'm not saying that
you can't make your breakfast trifle boozy but I don't want it to be boozy, I want it to feel
fresh and fruity. So with my now pretty much bald clementine I'm going to add the juice
to the sponge fingers. I'm just going to add a few pomegranate seeds,
I mean they're so Christmassy aren't they? I know that you can get them all the year
round now but they just remind me of Christmas when I was a child many centuries ago. So I just
put the fruit on frozen, the fruit will thaw and leave the sponge fingers soaked and sodden with
juice and that's all that I need to do to my breakfast trifle now. I shall leave it out
overnight and it can greet me in the morning. This is such a cheering sight, I mean it does
feel almost a shame to cover it up but almost because I am covering it up with cream. Cream
and greek yogurt and I think it's that lightness and zinginess you get from the yogurt which makes
this so perfect at breakfast. You can eat it anytime and somehow I managed to. Let's get
some greek yogurt, proper proper fatty kind, nothing lean, double cream and
the same thin shred or fine shred marmalade that's in the fruit, a bit of gold. Now I just
want to whisk this enough so I can cover that and not myself. Remains to be seen whether I can do
that. Do a teeny bit more, quite mesmeric. So this has got quite a bit of softness in it,
that's how I want it. So on this beautiful snowy topping I would like the tender green
of pistachio and now these beautiful pomegranate seeds, the jewels.
I'm not going to scatter any more on top, tempting though it is, because what I love about it like
this is that it offers calm as well as jubilation which is just what I want on Christmas day in the
