These are some chickpeas that I soaked in some cold water last night.
I'm just going to drain these and then add them to the pot.
Chickpeas are really nice and soft.
Oops.
Salt, olive oil, balsamic vinegar.
Salt, olive oil, lots of za'atar.
Za'atar.
Okay, so I have this vision for a salad that I want to make.
I'm hoping it's going to turn out.
We've got Dijon mustard, some red wine vinegar.
Let's also just do some capers.
Just a bit of salt because the capers are pretty salty.
Some olive oil.
A touch of smoked paprika.
Just taste it.
A tiny bit more salt.
Okay, I'm just going to let the beetroot sit in there so it can kind of marinate.
Arugula.
Actually a lot of arugula.
I'm also going to add some of these beluga lentils.
I was just having a really rough day.
I was at work for longer than I expected and I just was craving a big pot of curry.
So that is exactly what I made.
I used some chana daal, which I fried off with a bunch of veggies.
And then I added some coconut milk.
Gave that another mix and then some water to help the lentils cook.
And then I let this simmer for around 20 minutes.
After it was done, I added some fresh spinach, which I wilted down for a couple of minutes.
And then I added some soy sauce, garam masala, some chili and turmeric just to spice it up a bit more.
And then served this up with some basmati rice.
I am in the mood for some pancakes, so I'm going to make some pancakes.
If I can open this bag of flour.
I'm going to start by mashing one banana.
About a half teaspoon of baking powder.
Pinch of salt.
And then a cup of flour.
I'm using whole wheat flour.
To make the buttermilk, it's just half a cup of soy milk.
And a tablespoon of neutral vinegar or lemon juice.
This is the reality of filming meals on Instagram.
Because eating pancakes on Instagram is just not very convenient.
But eating pancakes as a big mess is just way more fun, isn't it?
For lunch, I want to make these lentil and amaranth patties.
These are from the Pick Up Line's app.
Cooked lentils and amaranth.
Garlic and red onion.
Nutritional yeast.
Cumin.
Paprika.
Cayenne or chili.
Salt.
Pepper.
Parsley.
Spinach.
I'm going to blend this up.
I'm adding some chickpea flour as a binder.
I'm going to make a quick tzatziki to go with the fritters.
In my opinion, you can't eat fritters without a good sauce.
So, some salt.
Pepper.
Finely chopped parsley.
Lemon juice.
I'm also going to add some of the hummus that I made.
Some bell pepper.
And then some pickled onions.
Mmm.
These are delicious.
Some chocolate cake for dessert.
Crinkle.
I'm seasoning black seeds.
Pumpkin seeds.
Slurp.
For lunch, I'm going to make a kale and potato mash.
Which is a pretty traditional German food.
So, in here I just have some kale and some potatoes.
And I'm going to add some vegetable broth.
You can also just use a bouillon cube.
Some salt.
And pepper.
To go with my mash, I'm going to make some crispy tofu.
The potatoes are done, so I'm just going to mash this.
I promise this tastes a lot better than it looks.
I love having a fresh element with my soups.
So, I'm going to make a topping with some brussels sprouts and some lemon zest.
And that's it.
Super easy.
Slurp.
Ham seeds.
Black seeds.
Pumpkin seeds.
The holy trio, in my opinion.
Some dark chocolate from my advent calendar.
So, I'm making a sandwich for lunch.
And in here I have some marinated beets.
This is the same sauce that I used for the salad the other day.
For the leftover marinade, I'm going to toss some smoked tofu that I cut.
As well as some cucumber.
Arugula.
Wow.
So, I soaked some sunflower seeds in water for a couple of hours.
Lemon juice.
Salt.
And pepper.
Nutritional yeast.
A few tablespoons.
The rest of the parsley that I have.
I'm also adding some kale just because I have this huge bag that I need to get through.
More water.
So, for dinner I just want to use up a bunch of stuff in my fridge.
And what I like to do in that case is I just make a big salad.
And then I add one, like, fun element.
Just to make the meal a bit more exciting.
Because eating leftovers or meal prep items isn't always the most fun.
In here I have the roasted veggies.
Some chickpeas for protein.
Lentils.
Sauerkraut.
Cooked millet.
For a bit of freshness I'm also going to add some pickled onions to the top.
And that's it.
Super simple dinner.
I've just reheated some of the waffles for breakfast.
I'm adding some yogurt and blueberries.
And I also want to add some clementine.
I love clementine so much.
And a drizzle of peanut butter.
I'm really excited to eat this. I'm so hungry.
I will add salt and pepper to this later.
So, for dinner my brother and I are going to make a salad.
My brother came over and we decided to make some pizza.
I made a homemade dough and divided that into two pieces.
Before topping mine with some tomato sauce.
And some fried mock meat and aubergine.
As well as some cashew parmesan.
And then after baking I topped it with some arugula as well.
Which is a lovely fresh element.
And then a drizzle of olive oil is always the best thing on pizza in my opinion.
And this brings us to the end of today's video.
I really hope you enjoyed and I will see you very soon.
