Let's make Tuscan chicken with a creamy garlic and parmesan sauce, sun-dried tomatoes and spinach.
Let's get started. We'll start with two chicken breasts and cut them in half horizontally,
like this, so you end up with four pieces. Try to get them all to be the same thickness.
I kind of failed at this. Eh, what are you gonna do? I'll do the same with the other chicken breast.
By the way, this is my red cutting board I only use for meat so I can sterilize it after.
Season both sides with salt and pepper. In a frying pan over medium-high heat,
add one tablespoon olive oil and two teaspoons of the sun-dried tomato oil from the jar.
Once that's hot, add the chicken. Brown the chicken on all sides. Move the chicken around
if the heat in your pan is not even. Once the chicken is nice and golden brown,
take it out of the pan and keep it nearby on a plate. Then turn the heat down to medium and
add one tablespoon of butter. Add one diced shallot, three cloves of minced garlic. Stir that
and when it starts to smell fragrant, add half a cup of chicken stock. Scrape the bottom of the
pan to get all those yummy bits. This is called deglazing. Then add half a cup of chopped sun-dried
tomatoes and one tablespoon of tomato paste. Stir until the tomato paste melts into the sauce.
Then add one cup of heavy cream and one cup of grated parmesan cheese. Once the parmesan is
melted, add three cups of washed baby spinach. Stir that until the spinach is wilted. It only
takes a couple of minutes. Now add your herbs. This is two tablespoons fresh basil and one
tablespoon fresh thyme. Stir until it gets thick and saucy, just like me. Put the chicken back into
the pan. Don't forget to add the juices. Turn the heat to medium low and let the chicken finish
cooking in the sauce. It takes about 10 minutes. All right, let's eat! Spoon the sauce over the chicken.
Finish with more parmesan and fresh basil. You can find the full printable recipe on my website.
