Hello! Welcome back to my channel, Devina Hermawan.
Today, we'll be making Chicken Caesar Salad a la salad bars or your favorite cafés.
The main flavor profile of Caesar Salad is savory as all the ingredients are savory.
It's delicious and it can be a salad dressing option for you.
This dressing can be used for all kinds of salads but today, we'll make the classic version.
We'll only use one type of salad: Romaine lettuce.
For the dressing, we need mayonnaise as the base. You can use homemade or your favorite mayo brands.
To form the main profile of Caesar Salad, we need Worcestershire sauce.
I'm using one from Lea & Perrins.
Some Caesar Salads use crushed anchovies, but it's not widely sold here and it can be quite expensive.
So, let's just use Worcestershire sauce.
Other ingredients include cooked egg yolks, mustard, garlic, onion, Parmesan, and lime.
Not only Parmesan, you can also use cheese with strong flavor like Edam, Gouda, Cheddar, etc.
You can use Parmesan powder, but I use finely grated Parmesan block.
For the topping, we'll make Grilled Chicken using chicken breast.
We'll marinate it with McCormick's Cajun Seasoning, lime, Black Pepper, and salt, to taste, and some oil.
To add extra Classic Caesar Salad flavors, we'll make croutons from white bread and crispy bacon.
In this case, I'm using Smoked Beef to make it Halal.
Okay, then. Let's start!
It's important to keep the veggies in the fridge so it stays cool and there's a cold-savory contrast when consumed.
Let's prep and marinate the chicken. Halve the chicken so it cooks easily without getting burnt.
Pound it with the back of the knife to even out the thickness and so the marinade gets absorbed easily.
Next, squeeze some lime juice over the chicken.
Then, sprinkle McCormick's Cajun Seasoning on it.
This now-popular Cajun Seasoning comes from the US.
The US has a mixed culture, and so this seasoning was born.
It's really aromatic and savory, perfect for meat.
It's composed of chili, garlic, onion, thyme, paprika powder, cumin, oregano, and black pepper.
It delivers a complex flavor, especially as a marinade.
Now, season with salt and pepper, to taste.
Optionally, I'll add Lea & Perkins Worcestershire sauce. I often use it to marinate meat.
It's not only fragrant but the acid in Worcestershire sauce will also tenderize the meat.
Lastly, add a bit of oil. Then, massage and rub the chicken.
Then, transfer to a bowl and let it rest.
If you rest it less than 1 hour, leave it at room temp. To marinate more than 1 hour, do so in the fridge.
I'll use two pans here, but you can use just one pan and do the steps one by one.
One pan will be for grilling the chicken, and the other will be used to cook the crispy bacon / smoked beef.
Next, we'll make the crouton or dried white bread.
Once the pan is hot, add the smoked beef in. Then, heat the second pan.
Add some oil. But, since this is a nonstick pan, you can skip the oil to create a low-fat dish.
Once the smoked beef crisps up a bit, lower the heat and fry it until it gets really crispy.
The fragrance of the Cajun Seasoning is really strong.
McCormick is the No.1 spice manufacturers in the world. It's a premium-quality product made in Australia and.
It's really practical as we just need to sprinkle it on. There are lots of spice choices to complete your kitchen.
It's really aromatic, so you'll get that value for money. Your dish will be flavorful with only a little bit of this spice.
When the oil calms down, it means the water content's low and the smoked beef has crisped.
The color is dark red now, so set it aside.
Don't throw out the remaining oil as it's really fragrant. We'll use it to fry the bread.
Use medium-low heat to crisp up the bread. You can add a bit of butter, too.
As we wait for to croutons to crisp and brown, let's make the Caesar dressing.
Mash the egg yolks, then add the Parmesan in.
Egg yolks are optional, but it makes the dressing savory and thicker.
It's also so the dressing stays savory even though we don't use as much cheese.
Then, combine all the ingredients together.
To balance out the flavor, dilute sugar with some water.
Then, add the diluted sugar to the dressing.
Other than salad dressings, you can use Lea & Perrins Worcestershire sauce for various purposes.
You can use it to marinate meat. Like I said, its acidity will make the meat juicy and remove any odor.
What does Worcestershire sauce taste like? It's fermented, so it has a unique and complex flavor.
What I like from Lea & Perrins Worcestershire sauce is a little bit goes a long way.
That's the difference between this Worcestershire sauce and others: it is extracted very well.
For the serving, you can serve it in a bowl or wrap it in Tortilla Skin.
I've shared this Tortilla Skin recipe before. It's flexible and fragrant.
It's easily one of the best flour-based Tortilla Skin recipes I've ever made, so you can definitely give it a try.
I use Romaine lettuce as it tastes mild and crunchy. Serve it cold and dry, so pat them dry first.
There's a lot of harmonious flavors and textures in one bite, and the combination is just right.
The most important thing is the flavor of the sauce. It's the unique characteristic of Caesar dressing.
I've provided the complete recipe in the description box, so just check it out.
The chicken is very fragrant thanks to the Cajun Seasoning.
The crouton is also very fragrant from the smoked beef oil. It's very easy to make, too.
