Delicious Homemade Mozzarella Cheese

Making your homemade mozzarella is fun, tasty, economical, and a LOT easier than you probably think!
DirtFarmer Maggie will walk you step by step through how to make your own mozzarella cheese using a gallon of whole milk (homogenized and pasteurized are fine, but not ultra-pasteurized), citric acid, rennet and some sea salt. A gallon of milk produces about a pound of cheese and total cost is about $3 per pound.
You'll LOVE the taste and texture! We make this about once a week around here, and it's a real treat to serve to our guests and family when they come for a visit.
Don't use Junket Rennet for this recipe! It's not strong enough and the proportion of types of rennet isn't what you need for a successful experience! You can get both vegetable or animal rennet online at cheesemaker.com, leeners.com or culturesforhealth.com. You may also find it at Home Brewing supply retailers. Citric acid is easily found at your local grocer in the canning or spice sections.
