Are you in there? Hello? Hello? Are you in there? Hello?
Vegan goes crazy towards a burger.
Hello guys, it's Gaz and welcome back to my YouTube channel.
Today we're making bhaji burgers.
Yes, that's right. Bhaji burgers just in 15 minutes. Let's make them. Come on.
So, onion bhajis in the UK, they're also called pakoras.
I don't know why we call pakoras bhajis in the UK.
But they're from India originally.
Pakoras, they are fried onions in a batter of gram flour and some spices as well.
They're a common street food.
Today I'm turning them into a nice burger.
So I'm going to fill the burger with the pakoras, also known as bhajis here.
A mint yoghurt, some mango chutney, some lime pickle, a lovely salad.
And it's all made in 15 minutes. These bhajis are excellent.
Bhajis are one of my favourite things.
Crispy, golden, filled with spices, oniony flavour. Epic. Let's make them.
Peel and grate two parsnips.
Then finely chop two to three white onions.
Alright guys, so I've got my finely chopped onions and the parsnip grated in here.
And I'm going to add a touch of salt now.
A generous amount of salt.
And that's going to help break this down slightly before adding the rest of the ingredients.
Give that a good mix up.
Finely chop a green chilli and a handful of coriander.
Next in the mix, add some ground coriander and ground turmeric.
So that's the flavours all in there now.
We need to add something to help it bind.
And the thing that makes bhajis bhajis is adding chickpea flour, also known as gram flour.
And that's going to help it bind together and turn it into a fritter basically.
And that's ready to fry then.
Give it a mix up.
So let's turn these into some fried patties and we'll make the burgers.
Simple as that.
Bring a pan of vegetable oil to around 180 degrees Celsius, ready to fry.
Only fill your pan halfway high so that it doesn't overflow when you fry the bhajis.
To test this hot, dip a wooden instrument into the oil and if it bubbles, it's hot.
Slightly form the bhaji mix into a patty before carefully dropping it into the oil.
Fry for around two to three minutes before removing from the oil and placing onto a lined plate.
Guys, look at this.
Just two minutes of frying.
Oh, fishing these out carefully.
Be very careful with this hot oil.
Look how golden and beautiful and crisp these look.
Amazing.
Just one thing I will say.
If you don't want to fry in oil like I'm doing now,
you can simply put these onto a lined baking tray and bake them for about 25 minutes.
Obviously it's not a 15 minute recipe then but it's slightly healthier.
This is the traditional way to cook bhajis.
Oh, my God.
They're going to be amazing.
Season with a little bit of salt to keep them crisp.
I'm going to put these aside, fry the rest and then build the burgers.
There we go, guys.
There's some incredible onion bhajis that smell absolutely incredible.
They're really crispy.
To serve with this inside the burgers, I'm going to make a really nice curried yogurt
using vegan yogurt bought from the supermarket.
I'm adding some cucumber, some fresh mint, some curry powder and a bit of lemon juice.
It's going to be amazing.
We just add a touch of salt and give it a nice mix up.
You can get vegan yogurt these days from all good supermarkets.
The one I'm using is coconut today but you can get soya, almond,
a whole range of vegan yogurt these days.
It's a sport for choice and they actually taste better than a non-vegan alternative dairy version.
Just to make sure that your recipe is made within 15 minutes,
you would obviously just mix this yogurt up whilst the bhajis are cooking
and also just make a quick salad with some gem lettuce.
Let's do that now.
Add some coriander.
So this lovely refreshing salad on top and some of my favourite things, black onion seeds.
Found at all good supermarkets, give that nice, beautiful, authentic Indian taste.
Just mix that up and there we have a lovely salad ready to go in our burgers.
So let's make them.
First up, add some mango chutney to the bottom of your bun.
One of my favourite things, just on the top bun, some lime pickle, bit of spice to that so be careful.
On the top there, there is my epic bhaji burger.
Fifteen minute meal, look at that.
I can't wait to give this a taste.
That is so beautiful to look at.
The flavours in there will be incredible.
Let's give this a taste then.
This is too big for my mouth.
That's what she said!
That is absolutely beautiful.
Crispy, spicy, the yoghurt really helps to add that freshness.
I love the sweetness from the mango.
This is so, so good.
You've got to try this.
Fifteen minute meal, a beautiful one for the weekend party vibes definitely.
Thank you so much for watching.
