During the hot summer days in Greece we like to keep our everyday life slow and minimal! A simple breakfast with my morning coffee, a road trip to the river where the breeze and the water are always cooler and a delicious, light and refreshing cheesecake for the children who love it!

Summer Cheesecake

100 gr of whipping cream (with vanilla flavor)
200 ml of fresh milk
*Mix for 5 minutes until the mixture turns fluffy

250 gr of cream cheese
The juice of one or two lemons
¾ sweetened condensed milk
*Mix well

1 packet of sweet-meal biscuits
100 gr melted butter or margarine or coconut butter (I prefer cow’s butter because it is healthier and has a mild taste)
*Turn the biscuits into a powder and mix them with the butter in a non stick pan. Then spread evenly in the pan you will put your cheesecake in.
*Put the mixtures and the pan with the biscuits in the fridge for about an hour.
*Next, mix gently the two creams with a spatula and spread evenly on top of the biscuit.
*You can cut in slices any kind of fruit you like and put it as the last layer of your cheesecake. I personally prefer fresh strawberries, if I make it during Spring, otherwise I like strawberry jam instead.
*You can adjust the recipe according to your preference. I add more whipped cream mixture, when I make for my children, because they love it that way.
*Keep in the fridge.
