Now that the weather is colder, I try to find recipes that will make us feel a little bit warmer. Also, the hens don’t give us many eggs at the moment and I don’t need many to add. Waffles are a great breakfast or snack in the afternoon. I like to keep the ones left as a snack for school the next day. The evenings of October are spent with a good book, a cup of tea and a candle.

🌻Sourdough Waffles Recipe:

*The ingredients must be at room temperature to mix properly
*Also, for a smooth mixture, stir each time you add a new ingredient.

3 eggs
Salt
3 Ts Sugar
1/2 cup of bubbly sourdough starter
350 ml of milk
Vanilla or vanillin
Cinnamon
250 grams Sifted flour
1 ts of sifted baking powder
50 grams of butter

First plug the waffle maker in. It should be hot before you use it.
Start by adding the ingredients one by one: Eggs, salt, sugar and mix. Add the sourdough and mix again. If you do not want to add any, add a little extra flour (20-30 grams to make the mixture thicker.) Do not add more starter because the taste will be strong and the waffles will not taste nice. Add the milk, vanilla, a little cinnamon, flour and baking powder. If you skip the sourdough, add another half spoonful of baking powder. (total 1 ½). Finally, the butter, after melting it over low heat in the saucepan. We want it to melt. Do not let it get hot or burn because it will spoil the mixture. Alternatively, start the recipe with this so that it has time to cool until you add the rest of the ingredients. The order doesn't change, though. The butter is added last. Leave for 2 hours in the fridge for fluffier waffles. Personally, I almost always make them right away.
If possible, lower the waffle maker a little. (A little over medium). If not, that's ok, the waffles will turn out just fine. First, spread some butter on the surfaces. Add enough mixture to just touch the edge, without filling completely. When it starts to bubble, close the lid. Leave covered until golden brown on top and cooked through. (Mine takes 2 minutes - It's the Silver Crest from Lidl)
Remove it using a wooden spatula. Repeat the same process until the mixture is finished.
Any leftovers can be refrigerated and reheated in the waffle iron or a non-stick pan.
