Hello everyone,
I'm Da Chui.
Today, I continue to share my trip to Zhejiang with you all.
In Taizhou City, Zhejiang Province, China,
there is a small town called Shitang Town.
This place is the easternmost part of mainland China
and a typical East China Sea fishing village.
The sea view is especially beautiful.
Let me show you some photos.
When we went there,
there was one thing,
which is still my favorite.
We also had a seafood feast in the fishing village.
This meal
was truly the most delicious seafood I've ever had in my life.
In the fishing village,
there's a small village called Xiaoru.
I took a photo in Xiaoru Village
with the sunset glow
shining on the houses
and the fishing boats resting.
Even the distant mountains were covered in gold,
as if wearing golden armor.
It's exceptionally beautiful.
I also brought something back from here.
Look, haha.
These are dried fish made by local fishermen.
They're dried with red snapper.
So they're called red snapper fish jerky.
So today,
we're going to eat it using the most traditional method from here.
This dried fish is partially dried.
Look at what I'm squeezing now.
It still has some elasticity,
not too hard and completely dry.
Moreover, it's lightly salted.
I soaked it in water just now,
now let's rinse it with clean water.
This dried fish,
because it's exposed to wind and sun outdoors,
we need to wash it several times.
Also, rinse off the excess salt on the surface.
Now, we have some coagulated blood residues on this fish.
Remove them.
For this red snapper,
there are still some remnants of fins.
Just trim them off.
Most of the impurities have been removed with this water.
Now, let's add a little baking soda to the water.
And remove the coagulated bloodstains.
Get rid of them.
For this red snapper,
you can see there are some remnants of the fins.
Just trim them off.
After cleaning it,
let it absorb the moisture.
Cut it into these pieces.
Because locally,
after this fish is cooked,
many people just squeeze and eat it with their hands.
Many people really like this taste.
Yellow wine, Shaoxing yellow wine.
This yellow wine,
don't put too much.
We use a spoon.
Like this, just pour a little bit.
For a large plate like this,
two spoons are enough.
Because we're steaming the dish.
If there's too much yellow wine,
the flavor won't dissipate.
Now the fish has been placed in the steamer.
It will be ready in another 25 minutes.

Red Snapper Dried Fish
I've steamed it
Now let's taste it
The smell of it
Let me tell you
When it just came out
The strong smell of salted fish
Together with the aroma of ginger and yellow wine
It's truly irresistible
I'm telling you
It's truly tempting
So delicious
Because it's semi-dried fish
So it's not too salty
Definitely can eat it directly
Also great with alcohol
I suggest if you don't want to steam it
You can put it in the rice cooker
Steam it with rice
Or add it when cooking porridge
When the porridge is almost cooked
Add some cleaned dried fish into it.
It's very delicious.
It's good with rice, alcohol, or congee.
Because it's semi-dry,
it still retains some moisture inside.
So the texture is very elastic.
As for the fat,
it has melted into the protein.
It's completely dissolved.
Look at my hands.
They feel sticky after squeezing.
Actually, this is
the fish's collagen.
I feel like I've turned into a cat now.
It's so delicious.
Really good.
Actually, dried fish
was originally a way to preserve fish,
but during this process,
some magical changes occurred,
creating a richer flavor.
The finest ingredients
can achieve the best flavor
with the most simple cooking methods.
I feel like my trip to Xiaoru Village
was worth every penny.
Haha!
That's it for this episode's dried fish.
We'll wrap it up here.
Do you know why I steamed such a big plate today?
Half of it is for myself,
and the other half
is for our cameraman.
He'll take it away later.
Haha, okay.
So, we'll end it here today.
See you in the next episode.
Hurry up and get the lunchbox.
Hehe.
