Only 1 Zucchini And 2 Eggs: The Fastest Dinner I'Ve Ever Made!

Today, I’m sharing a simple, healthy zucchini recipe: zucchini cooked in a waffle maker, shaped like donuts or mini cakes! 🥒✨ It’s a versatile recipe that’s easy to customize—you can make mini cakes, fritters, or even waffles depending on the mold you use. We swap regular flour for oats, making the dish lighter, healthier, and perfect for clean eating. The cakes feature a tender interior and a golden, crispy exterior, while cheese and scallions add rich, savory flavor. This quick and easy recipe is ideal for breakfast, a snack, or a simple dinner. It’s incredibly easy to make, resulting in a delicious, nutritious treat the whole family will love! 😍
