Let's make an easy and heavenly dessert that doesn't involve baking.
No-Bake Mango Cheesecake. Put the ground grahams in the bowl,
add the unsalted butter, mix it really well. Just continue mixing it until you have a sandy
wet texture like this. We will use an 8-inch cake pan. Place a cake board. This will help
to transfer easily the cake into a serving tray. Line the cake pan with acetate paper.
Pour the ground grahams mixture into the cake pan. Using the back of your hand,
depress the biscuit mixture. Spread it evenly around the cake pan.
Chill this in the fridge while we make our cheesecake mixture. Add the gelatin powder
into the water and mix it well until the granules of gelatin is dissolved.
Put the cream and gelatin mixture into a small saucepan. Turn on to low heat.
Stir it really well and simmer it until the gelatin is completely melted.
Turn off the heat, set it aside, and cool it down. In some recipes of cheesecake,
we just combine the cream cheese and whipping cream together. But with this recipe,
I want to show you a different method. We're going to beat the whipping cream to soft peaks.
Beating our whipped cream to soft peaks is going to add volume and make the cheesecake creamier.
Now you can increase the speed. As you can see, the cream is just starting to hold. That is the
soft peak stage that you're trying to achieve. So we're going to set aside our whipping cream.
Put the cream cheese into the bowl. Add the sugar, lemon zest, and lemon juice.
Beat them together until it's creamy. Let's pour the gelatin and cream mixture
and beat it again until everything is well blended.
Turn off the blender. Remove the remaining mixture inside the whisk. Scrape the side and the bottom
of the bowl. I can see that there are still lumps of cream cheese in my mixture, so I'm going to
beat it for one more time. Let's start folding the whipped cream into the cream cheese mixture.
Get the remaining half. Scrape your spatula along the curve of the bowl and all the way to the
bottom. The mixture is creamy and everything is well blended. Let's pour the cheesecake mixture
into our biscuit base. Shake the cake pan to spread the cheesecake and chill this in the
I'm getting about two tablespoons of apricot jam. Add some water. Turn on the heat.
Strain the apricot jam. Release the cake from the cake pan. Arrange the mangoes on top to
make a rose pattern. Let's brush the mangoes with apricot glaze. Glazing your fruit will
prevent the fruit from drying out and the cheesecake will look more appetizing.
This is our mango cheesecake and I'm going to have a slice for myself.
Get some mango cheesecake in the biscuit base.
Wow! This cheesecake is so delicious. It's so creamy and light. This is no bake and simple
to make. Hope you enjoyed my recipe and don't forget to share the recipe on Instagram and Facebook.
