Khachapuri (хачапури) is a traditional Georgian bread stuffed with a specific melting cheese known as sulguni from the Samegrelo region of Georgia. Sulguni is an unaged cow's milk cheese that has a slightly sour, moderately salty flavor and an elastic consistency similar to mozzarella or halloumi. It can be fresh or smoked and is used in many dishes besides cheese bread. Khachapuri is considered one of Georgia's national dishes and, when Georgia was a Soviet republic, Russians adopted the dish as their own and you will find it at pubs and restaurants
Welcome to my channel Alla's Yummy Food.
Today I'm actually going to be making a Georgian
bread. It's called khachapuri.
Some of you might have heard of it and there's loads and
loads of different recipes.
Of course in Georgia they make it with their traditional cheese.
Unfortunately we don't have that here
so I'm going to be making it with cheese that's easily
accessible to any of you obviously in supermarkets.
But it's really really tasty. It's basically
Bread filled with cheese, it looks like pizza,
but it's obviously called khachapuri and it's
definitely one of the most amazing things I've ever cooked
and people gave me loads
of good reviews.
So I really want to share this recipe with you today.
Okay, the ingredients we're going to be needing are the following.
We've got one teaspoon of sugar, one teaspoon of dry yeast,
which is about two and a half grams.
I've got 50 grams of unsalted butter, one egg salt,
100 milliliters of milk, about 250 grams of plain flour.
And then for the cheeses,
I'm using plain cheddar cheese, about 120 grams.
Mozzarella cheese, 150 grams, which is grated as well.
And I've got 200 grams of feta cheese.
Okay, so the first thing we need to do is activate our yeast.
So I've got my yeast and sugar in here, which we mix together.
And yeast usually feeds on sugar, so it just starts to activate.
And I've got quite warm milk here. Not hot, just warm.
Just put that in.
Give it a little stir.
And then I like to add just a couple of tablespoons of flour.
Like that. About three.
Mix that in again.
Once we get that sort of smooth consistency,
all we're going to have to do is cover it
with a towel and leave it somewhere
in a warm place for 15 minutes until it rises.
Okay, so my yeast is now puffed up and ready to go,
so now we get a new big bowl.
So I've put one egg into it,
now we're just going to whisk it, and then we're going to
add our butter, which I've melted and left to sit on the side,
just so it's not very
hot.
Just add that in.
Give it a good mix again.
And as you can see, my mixture is all puffed up,
so we're just gonna add that into here.
You can really smell
the yeast at this point.
That was so funny.
Now we're just gonna mix it again.
You can add a bit of salt, but that's your preference, if you like it.
Now we just slowly add the flour until all
the ingredients are incorporated.
Okay, so now once I've put all the ingredients together,
we just need to incorporate it until it's very smooth, as you can see.
And it's done.
Just like that, you can see it's very nice, very easy to work with.
So what we're going to do now,
just put it into a little bowl and leave it in here.
Cover it again with a towel
and put it in a warm place for about an hour
until it kind of pretty much doubles or even triples in size.
Okay, it's been an hour and my dough has actually risen quite a lot.
Now all we have to do is mix our cheeses.
So in a large bowl, I've grated my feta cheese.
So we just put
that in here to relish
our feta cheese.
Now we're just going to leave that aside
and start rolling out our dough.
It's on a plain surface. We dust it with some flour.
And then you can see our dough has risen.
We just carefully take it out, just like that.
And we're not going to mix it anymore.
We're just going to put a little bit more flour on the top
so it doesn't get stuck onto the rolling pin.
And I'm going to divide this mixture into half actually
because this makes two large khachpuris.
Just like that.
We'll leave one side.
All we do is just fold it
in and start rolling it out.
You can make any shape you like.
Obviously a round one is more popular, it's easier to cut.
Just
like
that.
Now we're just going to mix all the cheeses together by your hand.
And this is for two khachpuris, so I'm going to divide this equally.
So I'm just taking one half
and then with your hands just keep pressing up and down
until it starts to form a little ball, a little cheese ball.
And then all we do
That's fine, just put that right in the middle
and press again just a little bit, it has
to be in the center.
Now we start folding our mixture,
just like that from all the sides.
Press with your hand again just to even it out,
make sure the cheese gets into every
single corner.
And again you can use a rolling pin to just even it out,
just very gently.
And that's
pretty
much done.
Now we're going to also open a little, little hole here just so you can
breathe and bubble up. I'm gonna do the same with the second one.
Okay so I rolled out my Hachipuri
so the next thing we need to do is preheat our oven to 180 degrees
and I've got my pan here and then egg wash.
So it's just egg yolk with a bit of water and that's
what we're gonna cover our Hachipuri in.
So all we do now is just spread some egg around
and we cook
that for about 15 minutes.
Okay, there is my Hachipuri done. It's been in the oven for 15 minutes.
I also forgot to mention I've put a bit of cheese on top.
You can see how nice and crispy golden color that is.
So what we do now,
hot carefully,
take that out into a bowl.
And now I'm just going to cut it into equal squares
and serve that when it's ready to eat.
Wait, you can see the middle.
Oh yeah, look at that.
Layers of cheese, you can see through.
It smells so delicious, cheesy,
and you can get that pastry smell from the egg yolk.
Oh, it's really good.
It's very hot, but I really want to try it.
Just got myself a tiny piece.
Oh, look at that stringy cheese.
Mmm.
Mmm.
Oh my god, this is so good.
Very hot.
Guys, this is going to be a hit.
Whenever you make this, this is going to be amazing.
I hope you enjoyed this recipe.
