A splash of water, if needed for blending
80–100 g oat flour
1 egg
50 ml milk
2 tbsp Greek yogurt (2% fat)
1 tsp ground cinnamon
½ tsp baking powder
A pinch of salt
Cream cheese filling
100 g cream cheese
1 tbsp maple syrup
Oat streusel
⅓ cup rolled oats
2 tbsp maple syrup
2 tbsp flour
2 tbsp melted butter
Instructions
1. Preheat the oven to 180°C and grease or line 6 muffin cups.
2. Place the apple in a food processor and blend until smooth, adding a splash of water only if needed.
3. Mix in the honey, egg, milk and Greek yogurt.
4. Stir in the oat flour, cinnamon, baking powder and salt until combined.
5. In a separate bowl, mix the cream cheese with the maple syrup until smooth.
6. To make the streusel, combine the rolled oats, maple syrup, flour and melted butter.
7. Divide the batter evenly between the 6 muffin cups.
8. Add approximately 1 tbsp of cream cheese filling to the centre of each muffin.
9. Sprinkle the streusel over the top, around the cream cheese filling.
10. Bake for approximately 30 minutes, until the muffins are set and a toothpick inserted into the batter, avoiding the cream cheese centre, comes out clean.
11. Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool further.
