Today I will show you how to make Janu Cheese - homamde traditional cheese. We usually have it for Līgo and Jāņi, it is one of the biggest Latvian celebrations. Celebrated on June 23 & 24, it is two days and a night of food, singing and dancing. Traditionionally your house would be decorated with flowers, birch, oak, you have to have beer and cheese is made. The night is spent singing, eating, drinking, having a bonfire (and jumping over it to prevent evil spirits and illness) and looking for magical blossoms. You can either use store bought Jāņu siers (cheese) or make a home version. This recipe makes 2 cheeses, or you can make 1 large one.

Hello everyone,

it's a name it's a person's name
which is really popular name by the way Jānis
and siers is cheese in Russian you say sir
so here you go you've got two
languages how to say cheese
and it's it's served obviously all year round but
we traditionally have it on Līgo
which is a traditional national holiday we
have fires we have like flower I don't
know what they called in English like
flower things around your hair we've got cheese
and beer and it's a really really
amazing holiday and guys make sure you subscribe

is your favorite cheese also guys you

my dreams come true you can sponsor me as much as you
like and it's kind of an ongoing support
monthly I already have 16 of you which
means a lot to me and as some of you know I
do want to invest into better
equipment into second camera to make
the videos much better and look more
professional and obviously it is also
my dream to publish perhaps a cookbook and

then I really really need your support and
anything helps so just go check it out I'll leave all
the links down below in
in my description box for you guys to check out
and um yeah i really appreciate and love you all
thank you all so much for everything that you say
and all the love that you give in a large sauce
pan add full fat milk then add full fat cottage cheese
or farmer's cheese and keep mixing everything
together until it starts to separate you want
to cook this on a low heat for a good five to seven
minutes and just keep mixing you'll start
to see that the cottage cheese is
floating on top
and starting to separate it should look like this then we're
going to strain this into another bowl we're going
to keep a little bit of
liquid but the majority of it is gonna have to go
so just strain the cheese
place it back into your pan
then add butter
and mix everything together wait
until it melts and then add egg yolks
then mix everything together and you
might want to add a little bit
of that milk water that we discarded before then
add a pinch of salt
and keep mixing everything together on the low heat the
mixture will start to separate and become whole just keep using your
wooden spatula
and mixing it as you go this process will take some time so be
patient when it looks nice
and creamy just like that you want to add your
cumin mix it all together you can add
as much or as little as you want then take
your cheesecloth
and add your cheese mixture right in the middle this recipe
makes two cheeses like that so I'm just going
to show you example of one once
you've added your cheese you want
to take your cloth and just seal it from
all the sides using a hair band
or anything else that you can use to make
sure that the mixture is nice and tight.
Then place the mixture and your cheese
outside for 24 hours
and it should harden over the next day or two. You can
find my full recipe on my website
at allisyummyfood.com and check out
all the other latest recipes.
When the cheese is done you will see it's nice
and hard so when we unwrap it it should come off
the cheesecloth quite easily
but still be quite gentle
and don't pull too hard look at this beautiful yellow
color the smell is amazing it's just one
of the best cheeses you can guys have
slice your cheese and it's very very
nice and soft in the middle it's got
golden color outside
and it's got that delicious cumin flavor in every single
bite enjoy this video i'll leave
the list of other videos
that i think you might like especially the
cheese playlist because you know
if you love cheese you're gonna want to check those out
and a couple of the other recipes traditional Latvian
and Russian foods and yeah give me thumbs
