or you can check it out on my website now let's get cooking over
here I've got my quinoa
so just take any quinoa I prefer white one because it
will change the color of your cookies
and we're going to toast it on our frying pan we're going
to cook the quinoa for a couple of minutes until it's nice
and dry so for about five minutes or so
we really just want to warm it up and toast it
so it's got nice nice flavor then we're going to make
our egg from our linseed ground linseed
and water if you don't have ground linseeds you might need
to blitz them to make them ground
and you're just going to add the water and mix everything together
and then set this aside for a couple
of minutes maybe five to ten minutes for it to bloom keep
stirring your quinoa from time to time just kind of come over
and use your wooden spatula and shake
it up just like so as we don't want to burn it
and use like medium heat or so once your quinoa
is done you're going to shake it
and place it into your food processor you can see how it's
got a nice golden color
so that's what we're looking for it does need to get nice and roasted
and if you have already quinoa flour you can just use
that straight away i don't so we're
going to make our own we're going to blitz this for a couple of seconds
or minutes depending on
your food processor until it becomes nice
and smooth just like flour this might take some time
especially if your blender isn't very strong okay
so just keep going and blitzing until you get nice
floury texture just like
so in a bowl add your almond flour baking powder baking soda pinch of
salt and then add your roasted quinoa flour
and mix everything together until it's nice and smooth
then you want to set this aside for a minute
these are going to be our dry ingredients it's
important to make sure everything is mixed nice
and well over here i've got my water i'm going
to add vanilla extract together with coconut sugar
and almond butter you can also use peanut
butter if you wanted to but they will have more
of a peanutty flavor and then
you're gonna mix everything together
until it's nice and smooth just like so
should be nice creamy mixture next you're gonna take
your egg made from
our linseeds it should be nice and puffy just like
so and sticky so just add that
into your wet ingredients
and mix everything together one more time until
all of your ingredients are mixed through and incorporated.
This is basically going to work
as an egg replacement.
These cookies are so delicious trust me on this. Now we're going to
mix our wet ingredients together with our dry ingredients
so just add everything together into
a large bowl and mix everything through until it starts
to form a nice dough. The mixture will be
quite wet and very easy to work with just like so.
Now you're going to add your dark chocolate. I've
grated it into bigger chunks you can
also add chocolate chips you can add any chocolate that
you like dark milk any choice any chocolate
of your choice mix everything together I like a lot
of chocolate and then take your baking parchment paper
or silicone mat and start forming your cookies
in your hand they are going to be very gentle
and fragile so just squeeze them in your hand into a
nice ball just like so and place them onto
the tray they're not going to expand much so you don't
need to leave a lot of space in between just like
that and we're going to bake these for about 10
to 12 minutes at 180 degrees celsius
or 350 fahrenheit do not over bake these as they will
dry out and we really want them to be nice soft
and crunchy at the same time our cookies are done
look at that they smell incredible they're so yummy
so delicious i honestly love these so much
they are the beautiful healthy cookies
no one's gonna know that there's quinoa in there
they have a nice texture of a crunch
the chocolate just oozes out if you wanted to you can decorate
it with more extra almonds on top
and they are just absolutely amazing i really really love them
i can't wait for you guys to try these because these are the bomb i
also tried freezing them
and seeing how they will be after freezing
and they tasted still really delicious but of course
it's always best to eat them absolutely fresh
when they're nice and hot and warm and that chocolate
just oozes out just look at that they're
so delicious i can't wait for you to make these
and enjoy them.
