So if you're like me and have a toddler
who refuses to eat any breakfast he is offered
then you gotta come up with some pretty, crafty ways to get him to eat.
I don't like it, I don't like it.
Okay I'm gonna get you some cake, Georgie.
Oh no!
And so breakfast ice cream was born.
Breakfast ice cream is a healthy breakfast,
it's easy to make, it's dairy free and
best of all, George loves it.
So I know what you're thinking,
how is it ice cream if there's no dairy in it?
Well I add in a very secret ingredient
that makes it super creamy and also really good
for George.
how to make it. The base of this ice cream is strawberries and bananas.
The bananas are
really important because they make it creamy
but if you don't like strawberry you can
use raspberry or blueberries.
Start out by quartering your strawberries and slicing your
bananas and placing them on a tray.
Then pop these into the freezer for an hour or two
until they're frozen. Here I have my food processor.
Into this I'm going to add in
my frozen fruit. Followed by my secret ingredient which is avocado.
This is a great ingredient
to add to your ice cream for kids
because it's full of good oils for them, and also
it makes it really creamy and silky.
So I think a food processor is best for making
this ice cream because it moves around the
fruit.
If you use a Nutribullet or a hand blender
or something you might need to add liquid
in there to get the fruit to move around.
If you're noticing that some fruit has not pureed,
stop the machine, go in with a spatula
and move it around.
Then keep on pureeing until smooth.
When your ice cream is almost done I'm going
to add in a little bit of honey, just a dash
for sweetness, and a little bit
of vanilla extract just for a really nice flavor.
Keep on blending until you hear that it's smooth.
Then stop the machine, take off the lid,
and this is what it should look like, lovely thick
creamy ice cream.
So you can enjoy this straight away
but what I like to do is pop it into a tub, freeze
it and then you can have this ice cream whenever you want.
Next time you're having a breakfast emergency,
pull out your ice cream, scoop it, top it
with a little fruit, and you're good to go.
And just so you know, this ice cream is not just for George,
I absolutely love it too,
even late at night when I have a little bit of a sweet tooth.
And there you have it, breakfast ice cream,
a simple, delicious, healthy breakfast.
Let's go see if the boss likes it.
