What You Need:
For roasted pumpkins:
1 small sugar pie pumpkin, halved
1 garlic bulb, halved
1 tsp salt
2 TBL olive oil
For soup:
1 roasted pumpkin (see above)
2 TBL butter
1 inch ginger, grated
2 TBL roasted garlic
1 small onion, minced
1 TBL curry powder
3 cups veggie broth
1 can coconut milk
2 TBL or more of brown sugar
Salt to taste
Coconut milk + dried parsley to serve
1. Preheat an oven to 350 degree oven. Half a sugar pie pumpkin and place on a baking sheet. Place a halved garlic bulb in each half of the pumpkin. Drizzle with olive oil and sprinkle with salt. Roast for 1 to 1 1/4 hours or until pumpkin is cooked and garlic is golden.
2. Scoop out pumpkin and reserve 2 TBL of the roasted garlic.
In a large soup pot, melt your butter and add your onion, ginger, reserved garlic and a few pinches of salt. Cook until golden. Add curry powder and cook until aromatic. Add reserved pumpkin, and your veggie broth.
3. Blend the soup with a stick blender or in a large bar blender, carefully! It will be hot and sticky. Place back in the pot and add 1 can of coconut milk (reserve a few spoons for garnish). Add sugar, as sweet as you like it.
4. Serve piping hot in a bowl. Drizzle on some more coconut milk and a little dried parsley in the middle if you wish.
