What You Need:

Pavlova:
2 egg whites
Pinch of salt
1/3 cup sugar
1/2 tsp cornstarch
1/4 tsp vanilla
1/4 tsp lemon juice
Dram of pink gel color
Chantilly cream:
1/2 cup heavy cream
2 tsp sugar

To serve:
Raspberries
Raspberry jam

For Pavlova: Preheat oven to 250 degrees. Draw out two ovals and two small circles on a large parchment sheet. Draw one larger oval and a teardrop shape. Flip the parchment around so marker is facing down.

Whisk together egg whites and a pinch of salt. Start by hand so your stand mixer is able to grab them. Once they’re soft peaks, whip them on high until stiff peaks are achieved. Don’t overwhip!

With the mixer on low, slowly add sugar. Once all sugar is added, whip egg whites on high for 7-10 minutes or until you have thick, marshmallowy peaks. Then, add cornstarch, vanilla, and lemon juice. If you want, you can add less than a drop of gel color to make the pavlova lightly pink.

Spoon on pavlova over the drawn spots of your parchment and smooth out with a spoon. Using the back of your spoon, make small crevices in the spots. Bake for 30 minutes, then turn off the oven and allow the pavlova to cool in the closed oven for 1 hour. Then, you can store in a plastic bag until ready to use.

Chantilly cream: whip cream into soft peaks. Add sugar and whisk until stiff. Place in a piping bag.

Arrange your pavlovas on a plate to look like Alcremie’s face. Pipe in the gaps with cream. Put a raspberry in the center of the round pavlovas. Make small crevices for eyes in Alcremie’s face and fill with raspberry jam. Serve immediately.
