Today we’re taking you to Astara, Gilan, in northern Iran, near the Azerbaijan border, surrounded by the lush forests, mountains, and peaceful countryside of the Caspian region.

We’re preparing Mirza Ghasemi, a traditional Persian dish made with smoky eggplant, tomatoes, garlic, and eggs. Cooked over a wood fire in the heart of nature, the simple ingredients come together with a rich, smoky flavor.

From preparing the fresh ingredients and lighting the fire to roasting the eggplants and cooking the dish, every part of this meal takes place in the beautiful countryside of northern Iran.
