A quiet autumn day in the countryside, filled with a peaceful forest walk, cozy cooking, slow living and a little handmade project. 🌿🍂 In this silent vlog, we head into the forest hoping to find mushrooms, but come home with pinecones for future crafts instead. Back at our little countryside home, I spend a quiet afternoon in my creative corner, putting together a tiny illuminated miniature flower shop, with a little help from one of our cats.
🐾 Later, I use a zucchini from the garden to make simple lentil and zucchini fritters — warm, golden and perfect for an early autumn day. I write them myself as small diary notes to accompany each video. 🌿 Lentil & Zucchini Fritters A simple and nourishing recipe made with red lentils and zucchini. The fritters are a good source of plant protein and fiber, and they are naturally egg-free. They can also be made gluten-free when using certified gluten-free ingredients.
Makes about 7–9 small fritters Ingredients:
180 g soaked red lentils
150 g zucchini
½ small onion
1 garlic clove
1–2 tbsp chickpea flour, as needed salt, to taste black pepper, to taste smoked paprika, to taste a little oil for frying Method: Rinse the soaked lentils well and allow all the excess water to drain. Grate the zucchini on a coarse grater and squeeze it very well to remove as much moisture as possible. This is important, otherwise the mixture may become too wet. Blend the lentils, onion and garlic until you have a thick mixture. If your blender struggles, you can add 1–2 tablespoons of water, but use as little as possible. Add the squeezed zucchini, salt, black pepper and smoked paprika. Mix everything together. If the mixture seems too soft or wet, add 1 tablespoon of chickpea flour, let it rest for a couple of minutes and check the consistency. Add another tablespoon if needed. Spoon small portions onto a heated pan and gently shape them into fritters. Keep them fairly small and not too thick.
Cook over medium heat for about 3–4 minutes on each side, until golden brown and cooked through.
Important: the lentils in this recipe are used raw but soaked — not cooked or boiled beforehand. Enjoy!
