🍪 I Think I Found My New Favorite Cookies

I think I may have found my new favorite cookies! 🍪❤️

These buttery shortbread cookies are filled with a bright homemade raspberry filling and finished with white chocolate. The combination of delicate buttery cookies, sweet-tart raspberries and creamy white chocolate is so good — and they’re much easier to make than they look.

Perfect with coffee or tea, for a cookie box, or whenever you want something a little special.

Ingredients

Raspberry filling:

❤️ 200 g raspberries
🍚 50 g sugar
🌽 1 tbsp cornstarch
💧 2 tbsp water

Cookies:

🧈 110 g butter
🍚 100 g sugar
🥚 1 egg
🌼 Vanilla
🧂 A pinch of salt
🌾 250 g flour
🤍 50 g white chocolate

🔥 Bake at 180°C (350°F) for 15–20 minutes
