DRUNKEN NOODLES RECIPE:
175g (1/2lb) wide, dried rice noodles
3qt water
225g (½ lb) chicken thigh, halved longways and sliced ¼ ” thin perpendicular to the original cut
2g (½ t) salt
175g (1/2lb) gai lan or broccolini, thick stems removed, halved and cut on a bias
20g (1 1/2T) neutral oil, divided into 2 10g batches
30g (6 cloves) garlic, large minced
75g (about 2 med-lrg) shallot, thinly sliced
5-8g (1tsp) thai chile, roughly chopped
15g (handful) scallion, green tops only cut to 1-1 ½ “ pieces
10g (½ c) thai basil, picked, left whole
75g (5T) oyster sauce
10g (2t) brown sugar
50g (3 ½ T) water or stock
20g (4 t) fish sauce
20g (4 t) soy sauce
1. Bring a large pot of water to a boil
2. Cut chicken thighs into quarters, then into 1/4" slices. Toss with salt, set aside.
3. Pour boiling water over noodles. Agitate, cut in half. Soak 15 min.
4. While the noodles soak, prep the aromatics, chop the gai lan, and make the wok sauce by combining oyster sauce, brown sugar, water/stock, fish sauce, soy sauce.
5. Drain noodles and rinse with cold water
6. Heat a wok over high. Add half of the oil, gai lan, and a pinch salt. Leave undistur 80% cooked. Transfer to bowl.
7. Wipe wok with damp paper towel. Return to heat. Add the remaining oil and chicken. Leave undisturbed, 30 to 60 seconds until the edges brown, then stir-fry 2 minutes, until 85% cooked.
8. Add the garlic, shallot, Thai chiles. Stir fry 2 to 3 minutes until wilted and beginning to color
9. Return the cooked gai lan to wok. Toss it with chicken. Add noodles. Pour sauce around the hot edges of wok. Reduce 30 to 45 seconds without stirring, then combine until the sauce clings
10. Off heat add scallion and basil. Stir until the noodles break into 2-3-in lengths. Plate and garnish with additional basil and scallion
