1. Marinade lamb with 4 chopped cloves of garlic, rosemary, the juice of one lemon, salt, and pepper. Place in refrigerator an airtight bag for one hour.
2. Let lamb come to room temperature.
3. Place 1 Tsp oil in a hot skillet. Add lamb and herbs. Cook for 6 minutes on each side, for medium temperature.
Rice:
1. Bring 2 cups of chicken stock to boil in a saucepan. Add rice, pepper, and tumeric. Simmer on low for approximately 20 mins.
2. Gently fluff rice with fork when done.
Green bean salad:
1. Blanche green beans in boiling water for 2-3 minutes.
2. Remove from boiling water and place in a bowl of ice water for approximately 30 seconds.
3. Chop green beans and place in a bowl. Add feta, chopped onions, 1 tsp olive oil, salt and pepper. Refrigerate until needed.
Fire roasted tomatoe sauce:
1. Place the tomatoes, diced onion, and diced garlic in a blender. Pulse for 5-6 seconds. Sauce should be chunky.
2. Pour tomato mixture in a saucepan and simmer for approximately 20 minutes. Season with salt and pepper.
Tiziki sauce:
1. Mix Greek yogurt, cucumber, dill, the juice of 1/2 lemon, salt, pepper in a bowl. Chill until needed.
Creating the bowl:
1. Place a laddle full of tomato sauce in a bowl.
2. Add approximately 1/2 cup of rice.
3. Top with sliced lamb.
4. Sprinkle tziki sauce over lamb
5. Add approximately 1/4 cup of green bean salad on top.
