Hey what's up guys, welcome back. Today I'm going to show you a very easy and incredibly delicious chicken pot pie recipe.
So first up, in a mixing bowl you're going to add some all-purpose flour, followed by some diced cold butter, and a pinch of salt.
Give this just a very light mix, sort of just rub the butter in between your fingers with the flour, just so you start that sort of flaky texture going on with your dough.
Next you're going to add some cold water, and then you're going to start kneading this for about 2-3 minutes, just until it becomes one solid mass of dough.
Then you're going to put it onto your working surface with a little bit more flour, and then roll it out.
You're going to roll this out to about a quarter of an inch thickness, and you're going to do about 2-3 folds in between each roll.
Once that's done, you're going to throw it into the freezer just to let it set up for about 15-20 minutes.
Alright, so while you're waiting for your dough to chill in the refrigerator, you're going to start on the filling for your chicken pot pie.
So in a small sauce pot, you're going to add some olive oil to it, get it on medium to high heat, and you're going to sweat all your veggies, starting with your carrots,
sliced up scallions and garlic, some diced up celery and fennel, and a little bit of butter.
And you're going to cook this for about 2-3 minutes until all the veggies become translucent and tender.
Alright, once the veggies are clear and tender, you're going to add your diced up chicken breasts.
Cook this for about 3-4 minutes, just until it has a little bit of color, and then you're going to season with salt and pepper.
Alright, next you're going to add your all-purpose flour to the pot of vegetables and chicken.
Make sure you stir this a few times, just so the flour is thoroughly incorporated into the mixture, and that there's no raw clumps of flour sitting around.
After that, you're going to add your chicken broth, give it a few more stirs, and then you're going to cook this for about 10 minutes until it thickens up.
And then you're going to finish it off with a dollop of sour cream.
Alright, so once the chicken pot pie filling is done, you're going to pull the chilled dough out of the fridge,
put it onto a working surface, and then roll it out to about a quarter of an inch thickness.
Obviously, you can go thicker or thinner, depending on what you would like. It's completely up to you.
Next, you're going to punch out two circles that are about the same size as your ramekin,
and then you're going to fill up your ramekins with the chicken pot pie filling, and then cap it off with the dough.
Alright, once you're done capping off your pot pies, and they're completely sealed with the dough,
put them onto a baking tray, and you're going to cook these in an oven that's at 400 degrees Fahrenheit.
Once they're done, they're going to be bubbling away and just have a beautiful, crispy topping.
Let them cool down for about 15 to 20 minutes, and that's it. All you've got to do is crack into one and enjoy a chicken pot pie.
Alright guys, I'm super excited to try this chicken pot pie.
I know it's a little bit different than what a traditional chicken pot pie might look like, but all the components are there.
You know, you have the really nice, thick, stew-like center with the chicken and all the vegetables,
and that delicious chicken stock just sort of made this really nice little stew.
And then, of course, you have to cap it off with some sort of flaky pie dough or puff pastry,
and this just sort of embodies the concept of a chicken pot pie.
And I'm super excited to try it out, so let me dig in.
That topping is perfect. It's almost like a Ritz cracker.
That's like the best way to describe it. It's a nice little salty, buttery crust,
and you have all these wonderful veggies with the tender chicken, nice little stew going on.
Mmm, good pot pie.
This was a killer chicken pot pie recipe. I definitely recommend trying this out,
sharing it with your friends and family, and having just a wonderful dinner.
And this is just a killer recipe.
