Slow Living in Rural Ireland | Garden Room Progress & Best Homemade Plum Sauce

A slow August day at home in rural Ireland, with a little more progress in the conservatory, cleaning the old rattan furniture and making the most of our plum harvest.

I’m cooking duck with homemade plum sauce, Savoy cabbage, roasted beetroot and a simple plum crumble.

Plum sauce
1 kg plums
1 onion
2 garlic cloves
Fresh ginger
150 g brown sugar
100 ml apple cider vinegar
2 tbsp soy sauce
1 tsp cinnamon
1 tsp Chinese five spice
Salt

Simmer for around 30 minutes, blend, pass through a sieve and simmer again until thickened.

Plum crumble
Plums
Brown sugar
Cinnamon

Crumble topping
90 g butter
60 g sugar
100 g flour
40 g oats

Bake at 170°C for around 40 minutes.
