In today’s Finland summer vlog, I’m enjoying the last days of my summer holiday before going back to work, enjoying a few more slow and cozy days and simple summer moments before returning to everyday routine. A little tidying, flowers, picking forest berries, homemade pie, and an afternoon coffee make for a lovely final day of summer break. Late summer is berry-picking season in Finland, and I’m using the berries we picked to make a delicious Finnish blueberry pie — a classic treat enjoyed throughout the year. After a month away from filming, I’m excited to finally share this new vlog! 🤍 I took a break throughout most of July and early August to spend my summer holiday focusing on rest, slowing down, and recharging after a busy period of work. Sometimes, taking a proper break and having some carefree days is exactly what we need before starting another work year. I hope you enjoy this new vlog 😘
Finnish Blueberry Pie
In a large bowl, put the following ingredients:
60 grams melted butter
⅓ cup sugar
1 egg
¾ cup all purpose flour
½ cup oat flakes
½ teaspoon baking powder
¼ teaspoon salt
Stir everything to combine and transfer to a baking dish. Spread evenly including along the side. In the video I am using a 20cm round pie dish.
Pour in about a cup of fresh blueberries on top of the dough. If using frozen berries, stir in a tablespoon of flour into the berries beforehand.
-In the same bowl you used to make the dough, put the following ingredients:
250 grams quark
½ cup sugar
1 large egg
1 teaspoon vanilla extract
1 tablespoon lemon zest
¼ salt
Stir everything until well combined. Pour evenly on top of the blueberries. Bake in a 175 degrees Celsius preheated oven for 30-35 minutes.
Let it cool completely before serving.
