If you have bok choy and glass noodles at home, try this simple and heartwarming home-style dish!
Heartwarming Bok Choy and Glass Noodle Soup
Ingredients
Glass noodles: as needed
Bok choy: as needed
Tomato: 1
Scallions: 2 stalks
Garlic: 2 cloves
Ginger: 1 piece (about the size of your thumb)
Shredded pork: as needed
Light soy sauce: 3 tablespoons
Salt: a pinch
White pepper powder: a pinch
Cooking oil: a little
Water or broth: as needed
Ingredient Preparation

1. Soak the glass noodles in warm water for several minutes until softened, then drain and set aside.

2. Wash the bok choy and cut it in half if desired.

3. Dice the tomato.

4. Separately chop the white and green parts of the scallions.

5. Mince the ginger and garlic.

6. Shred the pork.

Cooking Steps

1. Heat a little oil in a pot, add shredded pork and stir-fry for a few minutes until the pork is no longer pink.

2. Add scallions, ginger, garlic, spices, and diced tomatoes, stir-fry briefly until the tomatoes release their juices and aroma.

3. Add 3 tablespoons of light soy sauce, salt, and white pepper powder, stir-fry quickly for less than a minute to mix well.

4. Add an appropriate amount of water or broth.

5. When the soup is almost boiling, add the bok choy.

6. After the water boils, continue cooking for 2 minutes.

7. Add the soaked and drained glass noodles and chopped scallions. Gently stir to combine and serve.

Tips: Do not overcook the bok choy; 2 minutes is just right to keep the leaves tender and the stems crisp.
